- Spring Vegetable Broth with Shredded Chicken
Ingredients:
- 1 tbspolive oil
- 1 large chicken breast, skin on
- 500mlchicken stock
- 1 slice sourdough bread, cut into cubes
- 2 tbsp grated parmesan
- 2 large handfuls spring greens
- 4 asparagus spears, trimmed, halved and cut into chunky pieces
- 40g fresh or frozen peas
Instructions:
- Heat the oven up to 200-degree celsius
- In a large pan, heat 1 tbsp of the oil in the pan and add in the chicken. Cook the chicken until it turns brown
- Bring the stock to the boil in the same pan, add the chicken and cook for 5 mins
- Now, turn off the heat, cover with a lid and leave to stand for 30 mins
- Put the bread cubes on a baking tray and drizzle with the remaining oil, some salt and the Parmesan
- Bake for 6 mins until crunchy and golden
- Now, remove and scrape off the tray onto a plate
- Remove the chicken from the pan and slice it. Bring the stock to the boil again and add the greens, asparagus and peas
- Cook for 1 min, then add the beans and chicken
- Heat everything through, then pour into bowls and top with the Parmesan toast to serve.
2. Mushroom Soup
Ingredients:
- 1 tbsp of coconut oil
- 1 onion, chopped
- 2 celery stalks, sliced
- 1 lb, shitake mushrooms
- 1 ½ tsp of salt
- ¼ tsp of black pepper
- 1 tsp of mushrooms
- 1 tsp of turmeric
- 12 cups of water
- ½ head of kale
- 1 tbsp freshly grated ginger
Instructions:
- Pour 1 cup of boiling water over the dried mushrooms in a bowl and leave them to soak for 10 minutes
- In the meantime, heat the oil in a heavy-based ovenproof pan
- Add the onion and ginger, then crush in all the garlic cloves. Fry gently until softened and aromatic
- Add in the mushrooms and their water to the pan, plus if you have any fresh mushrooms, then stir in the stock and the lemon juice
- Season with salt and pepper and then gently simmer with the lid on for at least 2 hours
- Alternatively, transfer the pan to a low oven
- Now, serve with a crunchy toast on the side!
3. Bone Broth Soup
Ingredients:
- 2 lbs of chicken with bones
- 1 ltr of water
- 2 TBSP apple cider vinegar
- 1 onion
- 2 carrots
- 2 stalks of celery
- 1 Tbsp of salt
- 1 tsp peppercorns
- Herbs and spices
- 2 cloves garlic
- 1 bunch parsley
Instructions:
- Start by boiling the chicken with the bones in water
- Add salt, and pepper to taste in the chicken. Allow it to boil for a couple of minutes
- Now, in another pan, add some oil and add roughly chopped onion, carrots, parsley and celery
- Drain the water from the boiled chicken and transfer it to the vegetable mix
- Now, allow it to boil for a couple of minutes and garnish with herbs before serving
- Serve hot with a slice of garlic bread on the side!
