Immune Friendly Dishes That’ll Help You Stay Healthy

  1. Spring Vegetable Broth with Shredded Chicken

Ingredients:

Instructions:

  1. Heat the oven up to 200-degree celsius
  2. In a large pan, heat 1 tbsp of the oil in the pan and add in the chicken. Cook the chicken until it turns brown
  3. Bring the stock to the boil in the same pan, add the chicken and cook for 5 mins
  4. Now,  turn off the heat, cover with a lid and leave to stand for 30 mins
  5. Put the bread cubes on a baking tray and drizzle with the remaining oil, some salt and the Parmesan
  6. Bake for 6 mins until crunchy and golden
  7. Now, remove and scrape off the tray onto a plate
  8. Remove the chicken from the pan and slice it. Bring the stock to the boil again and add the greens, asparagus and peas
  9. Cook for 1 min, then add the beans and chicken
  10. Heat everything through, then pour into bowls and top with the Parmesan toast to serve.

2. Mushroom Soup

Ingredients:

Instructions:

  1. Pour 1 cup of boiling water over the dried mushrooms in a bowl and leave them to soak for 10 minutes
  2. In the meantime, heat the oil in a heavy-based ovenproof pan
  3. Add the onion and ginger, then crush in all the garlic cloves. Fry gently until softened and aromatic
  4. Add in the mushrooms and their water to the pan, plus if you have any fresh mushrooms, then stir in the stock and the lemon juice
  5. Season with salt and pepper and  then gently simmer with the lid on for at least 2 hours
  6. Alternatively, transfer the pan to a low oven
  7. Now, serve with a crunchy toast on the side!

3. Bone Broth Soup

Ingredients:

Instructions:

  1. Start by boiling the chicken with the bones in water
  2. Add salt, and pepper to taste in the chicken. Allow it to boil for a couple of minutes
  3. Now, in another pan, add some oil and add roughly chopped onion, carrots, parsley and celery
  4. Drain the water from the boiled chicken and transfer it to the vegetable mix
  5. Now, allow it to boil for a couple of minutes and garnish with herbs before serving
  6. Serve hot with a slice of garlic bread on the side!
