1. Bacon Bolognese

Ingredients: 

Instructions: 

  1. Boil the spaghetti following pack instructions –  Meanwhile, heat the oil in a non-stick pan
  2. Add the carrots, celery and bacon, and stir well
  3. Cover the pan and cook, stirring occasionally, for 10 mins until the veg has softened.
  4. Tip in the pesto, warm through, then stir through the drained spaghetti with the basil, if using.

2. Tender, Juicy Grilled Chicken with Bacon Blanket

Ingredients: 

Instructions: 

  1. Preheat the oven to 375 degrees F.
  2. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, salt and pepper.
  3. Rub half of the spice mixture all over the chicken breasts.
  4. Wrap each chicken breast in 2 slices of bacon. Place the chicken breasts, seam side down in a baking pan or ovenproof skillet.
  5. Sprinkle the remaining brown sugar mixture over the top of the chicken.
  6. Bake for 25-30 minutes or until bacon is crisp and chicken is cooked through, basting the chicken occasionally with the pan drippings. 
  7. If you prefer extra crispy bacon, broil for an additional 1-2 minutes.
  8. Sprinkle with parsley, then serve.

3. Bacon and Mushroom Toast

Ingredients: 

Instructions: 

  1. Fry the bacon in butter till crisp and finely chop it.
  2. Wash and slice the delicious mushrooms.
  3. Quick fry them in butter and bacon fat.
  4. Add cream, chilli powder, salt and pepper.
  5. Fold in the curd and cook it until reduced.
  6. Spread the mixture over the toasts and serve piping hot bread toasts with your favourite bacon. 

4. Avocado and Bacon Fries

Ingredients: 

  • 3 avocados
  • 24 thin strips of bacon
  • 1/4 c. ranch dressing, for serving

Instructions: 

  1. Preheat oven to 425º. Slice each avocado into 8 equally-sized wedges. Wrap each wedge in bacon, cutting the bacon if needed. Place on a baking sheet, seam side down.
  2. Bake until bacon is cooked through and crispy, 12 to 15 minutes. 
  3. Serve with ranch dressing.
