- Baked Chicken Schtiznel
Are you a chicken fanatic? Read on to treat the chicken fan within yourself with this baked chicken schnitzel recipe.
Ingredients:
- 2 tbsp of Olive oil
- 6 chicken breasts
- Salt and pepper to taste
- ¾ cup all-purpose flour
- 2 eggs beaten
- 2 cups seasoned breadcrumbs
- 1 large lemon, zested
Instructions:
- Start by preheating the oven to 220 degrees C
- Line a large baking sheet with aluminium foil and drizzle olive oil over foil
- Place baking sheet in the preheated oven
- Now, flatten chicken breasts so they are all about 1/4-inch thick
- Season chicken with salt and pepper
- Mix flour and paprika together on a large plate
- Beat eggs with salt and pepper in a shallow bowl
- Mix bread crumbs and lemon zest together on a separate large plate
- Dredge each chicken piece in flour mixture, then egg, and then bread crumbs mixture and set aside in 1 layer on a clean plate
- Repeat with remaining chicken
- Remove baking sheet from oven and arrange chicken in 1 layer on the sheet
- Drizzle more olive oil over each piece of coated chicken
- Bake in the preheated oven for 5 to 6 minutes
- Flip chicken and continue baking until no longer pink in the centre and the bread is lightly browned, 5 to 6 minutes more
- Serve hot with the choice of your bread and enjoy!
2. One-Pot Thai Style Rice Noodles
There is nothing better than one-pot meals! They are easy, quick and super delicious. Read on to prepare this one-pot Thai style rice noodle recipe.
Ingredients:
- 2 tbsp. Cornstarch
- 1 ½ tbsp. Of water
- 6 cups chicken broth
- 2 ½ tsp of soy sauce
- 1 tbsp of fish sauce
- 1 tbsp of rice vinegar
- 1 tbsp of chilli garlic sauce
- 2 tbsp of vegetable oil
- 2 tsp fresh ginger minced
- 2 cloves of garlic, minced
- 1 tsp of ground coriander
- 1 pack of thick rice noodles
- 1 cup sliced zucchini
- 1 cup sliced red bell pepper
- 2 cooked chicken breasts
- ¼ cup crushed peanuts
- ½ cup chopped fresh cilantro leaves
Instructions:
- Stir cornstarch and water together in a small bowl until smooth
- Pour chicken broth into a large pot and stir cornstarch mixture, soy sauce, fish sauce, rice vinegar, chile-garlic sauce, vegetable oil, ginger, garlic, and coriander into the broth
- Cover and bring to a boil
- Place rice noodles in the boiling sauce, reduce heat to medium, and simmer until noodles are tender, 5 to 10 minutes
- Stir zucchini, red bell pepper, and chicken into the sauce
- Bring back to a boil, cover, and simmer until vegetables just become tender about 5 more minutes
- Remove from heat and let stand, covered, for 5 minutes to thicken
- Now, serve garnished with crushed peanuts and cilantro.
3. Masala Pasta
Give your comfort food a spicy twist with this easy recipe. Read on to prepare masala pasta at the comfort of your home.
Ingredients:
- 1 cup penne pasta, or any pasta
- water to boil
- ½ tsp salt
- 1 tsp oil
- 1 tsp butter
- 2 clove garlic, finely chopped
- 1-inch ginger, finely chopped
- ½ onion, finely chopped
- 1 cup tomato pulp
- ¼ tsp turmeric
- ½ tsp Kashmiri red chilli powder
- 2 tbsp tomato paste
- ½ tsp garam masala powder
- ½ tsp salt
- 2 tbsp corn
- ¼ capsicum, finely chopped
- ¼ carrot, finely chopped
- 2 tbsp peas
- 7 florets broccoli
- 3 tbsp water
- ½ tsp mixed herbs
Instructions:
- Start by sauteeing 1-inch ginger and 2 clove garlic in 1 tsp oil and 1 tsp butter
- Further, saute ½ onion till they turn soft
- Now, add 1 cup tomato pulp and saute well and keep stirring till the tomato pulp thickens
- Add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt
- Saute till the spices get cooked completely
- Now, add 2 tbsp corn, ¼ capsicum, ¼ carrot, 2 tbsp peas and 7 florets broccoli and saute for a minute
- Add in 3 tbsp water and mix well
- Cover and simmer for 5 minutes and add in 2 tbsp tomato sauce and ½ tsp mixed herbs
- Now, mix well and add in the cooked pasta and mix gently till the sauce gets coated well
- Finally, serve masala pasta Indian style hot topped with cheese if required.
