Are you bored with avocado and toast? So are we! We have been eating the same old avo toast for a very long time now. It’s time we make something more out of the delicious avocados and impress our taste buds. Read on to prepare some of the amazing avocado recipes at home.
- Green Goodness Smoothie Bowl
Smoothie bowl with avocado? Totally possible! Read our version of the green smoothie with some delicious avocados.
Ingredients:
- 2 banana’s slitted
- 1 ripe avocado
- 1 small ripe mango
- 100 gm spinach
- 250 ml of milk
- 1 tbsp unsweetened almond milk
- 1 tbsp almond butter
- 1 tbsp honey
- 2 tbsp of mixed seeds
Instructions:
- In a blender, add in the bananas, avocado, mango, spinach, milk, almond milk, honey and almond butter
- Blend it for about 5-6 minutes until a smooth consistency is formed
- Pour out the smoothie in a serving bowl and top it off with some seeds
- You can also save the rest of the smoothie in a glass bottle and enjoy it later!
2. California Quinoa and Avocado Salad
Ingredients:
- 250 gm butternut squash
- 2 tbsp of olive oil
- 120 gm of broccoli
- 250 gm of cooked quinoa
- A small handful of coriander leaves
- A small handful of mint leaves
- 4 spring onions, finely chopped
- 50 gms of pomegranate seeds
- 20 gms of pistachios
- 1 small ripe avocados
- Juice of ½ a lemon
- 1 tsp tahini for dressing
- 1 tsp of lemon zest
- 2 tbsp honey
Instructions:
- Heat oven to 200C/180C and line a baking tray with parchment paper
- Tip the butternut squash onto the tray, drizzle with 2 tsp oil and season well
- Now, roast for 20 mins, then push the squash to one end of the tray, add the broccoli to the other end and drizzle with 1 tsp oil
- Season and roast for 10 mins more. Meanwhile, start making the dressing
- Put all the ingredients in the small bowl of a food processor, add 1 tbsp water and a pinch of salt
- Blitz to make a loose dressing, adding a little more water if necessary
- Squeeze the pouch of quinoa to separate the grains, then tip into a large bowl. Add the herbs, spring onions, pomegranate seeds and pistachios
- Now, add the remaining 1 tbsp oil, season and toss everything together and add the roasted veg too
- Divide the salad between two plates and drizzle over the dressing. Halve the avocado and remove the stone, then slide a dessertspoon between the skin and flesh to remove it in one piece
- Place on a chopping board rounded side up, and thinly sliced
- Squeeze over the lemon juice, then slide a knife underneath and lift half the avocado onto each salad
- Top with the sprouts and grind over a little pepper, if you like.
3. Toasted Avocado Sandwich
Ingredients:
- 2 slices bread
- 100 grams of salmon slices
- 1 handful lettuce
- 1 avocado, sliced
- 1/8 red onion, sliced thinly
- 2 tbsp of butter
- salt
- pepper
- 2 tablespoons cream cheese
- 1 tablespoon mayonnaise
- 1/2 tablespoon lime juice (or squeeze 1/2 lime)
- 3 chives
Instructions:
- Start by spreading the mayonnaise on one side of the bread and place the avocado slices on the other side
- Add in the smoked salmon over the avocado and sprinkle with mozzarella
- Now, heat a non-stick pan over medium and spray some cooking spray
- Place the sandwich onto the pan and fry on both the sides with the help of some butter
- Toast until both the sides of the bread are nice, golden and crispy
- This will allow the cheese to melt and ooze out
- Place the sandwich on a serving plate and cut into half
- Serve with a side dip of your choice.
