  5. Once the onions are cooked add the sweet potatoes, eggplant, garlic, turmeric and ginger
  6. Place the cooked chicken over the veggies and pour water
  7. Sprinkle salt and pepper to taste
  8. Let it simmer until the stew thickens. Enjoy it with rice or healthy carbs of your choice.

  • ¼ cup butter melted
  • 3 tbsp. Dijon mustard
  • 1 ½ tsp. honey
  • ¼ cup dry bread crumbs
  • ¼ cup finely chopped pecans
  • 4 tsp. parsley
  • 4 salmon fillets
  • 1 lemon, for garnish

  1. Preheat the oven to 200 degrees Celsius
  2. In a small bowl, stir together butter, mustard, honey and set aside
  3. In another bowl, mix together bread crumbs, pecans and parsley
  4. Brush each salmon filet lightly with honey mustard mixture, and sprinkle the top of the mixture with bread crumbs
  5. Bake the salmon for 12-15 minutes in the preheated oven
  6. Season with salt and pepper and garnish with a wedge of lemon.

  4. In a skillet over a medium heat add – oil, onions, garlic and sauté until onions turn translucent
  5. Now, flavour with cumin, curry powder, salt and pepper. Stir and combine everything well
  6. Add the tomatoes, green peas and coconut milk and bring everything to simmer
  7. Now, add back the cauliflower back to the pot and let it cook for 5-8 minutes.
  8. Serve with steamed rice or bread of your choice.
