We all love consuming chicken in various forms, whether sandwiches, pasta or as Indian curries. But where we fail to succeed it when it comes to cooking the meat. Well, not anymore! With these recipes you are bound to succeed in making a delicious chicken meal!
1. Lemon Pepper Chicken
While just chicken breasts can be quite boring, you can add some zest to the same by adding some lemons. Try this juicy lemon pepper chicken and cook your way to a healthy meal.
Ingredients:
- ½ cup Healthy Alternatives Organic Rice Flour
- 1 tbsp. lemon pepper seasoning
- 1 tsp. Healthy Alternatives Lake Salt Powder
- 2 lemon
- 2 boneless skinless chicken breast
- 2 tbsp. olive oil
- ½ cup chicken broth
- 2 tbsp. butter
- 2 cloves minced garlic
- Freshly chopped parsley
Instructions:
- In a medium bowl, whip together flour, lemon pepper, salt, and zest of 1 lemon. Toss chicken breasts in the flour mixture until fully coated. Slice remaining lemon into thin rounds.
- In a large skillet, heat the oil. Add the chicken in a single layer and cook for around 5 minutes, until golden on bottom and then flip.
- Then add broth, butter, garlic, and lemon slices and cook for around 15 minutes until chicken is cooked through and the sauce has reduced slightly.
- While serving, spoon the sauce on top of chicken and garnish with parsley.
2. Chicken With Mushrooms And Mustard
Doesn’t it sound a yummy combination when we put chicken and mushrooms together? This will make for an excellent easy-to-whip dinner dish.
Ingredients:
- 4 boneless skinless chicken breast
- 2 tbsp. Healthy Alternatives Organic Rice Flour
- 2 tbsp. olive oil
- 1 tbsp. butter
- 1 chopped onion
- 1 cup thickly sliced mushroom
- ½ cup light cream
- 1 tbsp. freshly chopped parsley
- 1 tbsp. L’Exclusif Whole Grain Mustard
- 1 tbsp. lemon juice
Instructions:
- In a skillet, heat the oil over medium heat.
- Add the chicken breasts and sauté for about 7 minutes, turning them once. Remove and keep them aside once cooked.
- Now add butter to the skillet and increase heat to high. Add the onion and mushrooms and sauté for about 5 minutes. Then reduce the heat to low.
- Add cream, parsley, mustard and lemon juice and bring the sauce to a boil while stirring constantly.
- Pour the sauce over chicken and serve.
3. White Chicken Chilli
This is the perfect dish to whip when you are looking for some comfort food and do not want to settle for a soup.
Ingredients:
- 1 tbsp. olive oil
- 1 diced onion
- 1 seeded and minced jalapeño
- 2 cloves minced garlic
- ½ tsp. Healthy Alternatives Oregano
- ½ tsp. Nature’s Cumin Powder
- 2 finely chopped green chilies
- 3 boneless chicken breast
- 5 cup chicken broth
- Healthy Alternatives Lake Salt Powder
- Healthy Alternatives Organic Black Pepper Whole
- 2 can white beans
- 1 ½ cup corn
- ½ cup sour cream
- Freshly chopped parsley
- ¼ cup crushed L’Exclusif Cheese & Herbs Tortilla Chips
Instructions:
- In a large pot, heat oil over medium heat. Add onion and jalapeño and cook for about 5 minutes. Add garlic, oregano, and cumin and cook for a 1 minute. Add green chillies, chicken, and broth and season with salt and pepper. Bring to a boil, then reduce heat and simmer, covered, 10 to 12 minutes, until chicken is tender and cooked through.
- Transfer chicken to a plate and shred with two forks. Return to pot and add white beans and corn. Bring to a simmer and let cook for 10 minutes. Turn off heat and stir in the sour cream.
- Ladle chili into bowls and garnish with parsley, cheese, and chips before serving.
