  1. Baked Lobster Tails

  1. Using a clean pair of scissors or kitchen shears, cut along the middle of the top of the shell of the lobster towards the fins of the tail, making sure to cut in a straight line. Do not cut through the end of the tail
  2. Now, using a spoon, separate the meat from the two sides of the shell, then lift the meat up and out from inside the shell
  3. Press the two sides of the shell together, then lay the meat over the seam where the two shells meet
  4. If you are having difficulty opening the shell up to lift out the meat, flip the tail over and make cuts along the carapace where the legs meet the bottom part tail. This will help break the rigid structure of the shell and allow it to be more flexible
  5. While cutting through the shell, you may have also cut into the meat, which is perfectly okay. Make a shallow cut through the middle of the lobster meat so that you can peel down the thin layer of meat over the sides. This gives the lobster tail its signature look.
  6. Preheat oven to 230°C)
  7. In a small bowl, combine the butter, salt, pepper, garlic powder, paprika, lemon juice, and parsley, then brush the mixture evenly over the lobster meat
  8. Place the tails onto a baking sheet, then bake for approximately 12-15 minutes, until the lobster is fully cooked but not rubbery
  9. Serve with a side of broccoli and a lemon wedge
  10. Enjoy!

2. Exotic Chicken Marbella

Ingredients:

  1. In a large bowl, mix together oil, vinegar, prunes, olives, capers, bay leaves, garlic, oregano, 2 tablespoons salt, and 2 teaspoons pepper. Add the chicken to marinade and cover tightly with plastic wrap. Transfer to the refrigerator and marinate for 2 to 6 hours, tossing mixture every few hours to ensure even marination
  2. Now, preheat the oven to 350° C and transfer the chicken and marinade to a large roasting pan. Pour wine all over and sprinkle brown sugar over chicken
  3. Bake the chicken, basting every 20 minutes with pan juices until chicken reaches an internal temperature of 150°, 50 to 60 minutes total
  4. Increase the oven to 500° and roast until chicken skin is deeply golden for about 15 minutes
  5. Remove the chicken, olives, and prunes onto a platter and cover loosely with foil. Transfer the pan juices to a medium saucepan. Bring the liquid to a simmer over medium heat and let reduce by half, about 6 minutes. Season to taste with salt and pepper and whisk in cold butter and parsley
  6. Serve the chicken with a drizzle of pan juice reduction.

  1. Preheat the oven to 350-degree Celsius and grease a square baking pan with parchment paper, covering the bottom and sides 
  2. Now, over a double boiler, melt together the chocolate chips and butter until smooth 
  3. Remove from the heat and set aside to cool it down slightly 
  4. In the bowl of an electric mixer, mix together the eggs, brown sugar, vanilla extract on a high speed 
  5. Once combined add the melted chocolate and mix on high speed for 1 to 2 minutes 
  6. Meanwhile, in a large mixing bowl, sift together the flour, cocoa powder, sugar and pinch of salt. 
  7. Now, add the dry ingredients into the wet ingredients and fold together the mixture until fully combined
  8. Pour out half of the batter into the pan and add the melted chocolate chips or Nutella and cover it with the remaining batter 
  9. Now, allow it to bake for about 30 minutes or until the toothpick comes out clean 
  10. Allow it to cool completely before you top it with your favourite frosting!
