Milk is the one common food item found in every household. We often use it to prepare tea, coffee and several other dishes. One simple everyday essential item can bring out the best of flavours with these various recipes. Read on to prepare these milky recipes at the comfort of your home.
- Milk Pudding
Ingredients:
- 1 cup milk
- 2 tbsp of cornstarch
- 1 egg
- 1 tbsp sugar
- 1 tbsp of unsalted butter
- 1 tsp of vanilla extract
- Blanched almonds
Instructions:
- In a bowl, whisk together cornstarch and sugar
- Mix in the milk gradually to avoid lumps
- Now, place it over medium heat, until it starts bubbling
- Pour half of the mixture in the bowl and add the beaten eggs. Beat the mixture until it is smooth and silky
- Now, add the prepared egg mixture in a saucepan having other half milk-cornstarch mix and cook on medium heat until it thickens
- Keep on stirring constantly to prevent from sticking to the pan
- Now, check if it evenly coats the back of the spoon, if it does, then turn off the heat otherwise cook it for some more time
- Remove the saucepan from the heat and add in the butter, vanilla extract
- Pour into individual bowls and let them cool at room temperature
- Garnish and serve them warm or chilled pudding with some almonds and pistachios.
2. Rasmalai
Ingredients:
- 5 cups full-fat milk
- ½ tsp saffron strands
- 1 tbsp of warm milk
- ¼ cup of sugar
- ½ tsp of cardamom powder
For the rasgulla:
Instructions:
- Boil the milk in a pan on a high flame by stirring twice in between for 4 to 5 minutes
- Now, reduce the flame to low and allow the milk to cook for another 15 minutes
- Make sure the milk reduces to half of the quantity
- Meanwhile, combine the saffron strands in 2 tbsp of warm milk
- Now, add the sugar in the boiling milk and cook on a medium flame for a couple of minutes
- Turn off the heat and add in the saffron milk into the reduced milk
To prepare the rasgulla’s
- Boil the milk in a pan on a high flame by stirring continuously between 4 to 5 minutes
- Now, switch off the flame and the lemon juice gradually and keep stirring gently until it curdles
- Next, strain this mixture into a muslin cloth and separate the whey
- Tie and hang the cloth to remove any extra whey from the paneer
- Divide the paneer into balls and roll them out to form a thick ball
- In a medium pot of boiling water, add some sugar and the paneer balls
- This will ensure that the rasgulla’s are sweet and tender from the inside
- Once the balls are soaked into the water, transfer them into the prepared saffron milk
- Serve chilled as a dessert!
3. Milk Cake
Ingredients:
4 large eggs
2 cups of sugar
1 tsp of vanilla extract
2 ½ cup of all-purpose flour
2 ½ tsp of baking powder
1 ½ cup of milk
10 tbsp of butter
Instructions:
- Start by preheating the oven to 350 degrees celsius
- In a large bowl, beat eggs on high speed for 5 minutes or until thick and lemon-coloured
- Gradually add sugar, beating until mixture is light and fluffy
- Now, stir in the vanilla extract. Combine the flour and baking powder; gradually add to batter beating on low speed until smooth
- In a small saucepan, heat the milk and butter just until the butter is melted
- Gradually add to the batter and beat just until combined
- Pour into a greased a pan and allow it to bake for 30 to 35 minutes
- Now, check with a toothpick if the cake is cooked. If the toothpick comes out clean, then your cake is ready.
