1 cup dashi (Japanese soup stock)
¼ cup mirin (sweet rice wine)

10 Gram Nori sheet, chopped

3 Gram Salt
10 Gram Water
2 Gram Garlic
50 Gram Oil (to deep fry)

Instructions:For the sauce: 

  1. Add all the ingredients in a saucepan and bring to a boil(medium heat)
    Let it cool and serve as a dip in small bowls

    For the Tempura:

1. Take a bowl and make a batter of tempura flour, chopped garlic, salt, and water 

2. In a saucepan, add sweet corn to boiling water and let it cook

3. Add the boiled corn into the flour along with nori sheets and preferable seasoning

4. Fashion them into small balls and deep fry it until golden brown

5. Place on tissues to drain the excess oil and serve hot with the Tentsuyu sauce. 

2. Japanese Ramen Noodles

Ramen noodles are one of the most notorious dishes in Japan. The flavours and the combination of spices with a mix of veggies make it a mouthwatering dish and here’s how you can make it:

Ingredients:

Instructions:

  1. Boil the quinoa noodles according to the package instructions
  2. Drain the water after rinsing with cold water and add some sesame oil to avoid sticking
  3. Cut mushrooms and bell peppers and pour soy and vinegar sauce, set aside
  4. In a pan, add pure sesame oil and once it’s hot, add sliced onions and chopped garlic. Saute until the onions soften
  5. Add the soaked mushrooms and bell peppers. Continue to saute until the mushrooms cook
  6. On a medium flame, toss the noodles into the pan and mix well
  7. Transfer to a bowl, garnish with sesame seeds, and serve hot!
  8. For the sauce, add vinegar, soy sauce, ginger, salt, and pepper and mix well

For the chicken:- 450 grams of skinless, boneless chicken thighs

– 2 tbsp soy sauce

– 1 cup cornstarch

– 3 cups of vegetable oil for deep frying 

– 2 scallions (sliced) 

– ¼ cup coriander
Sweet chilli sauce (Thai sauce)

Instructions:

1. Marinate the chicken in a sauce of sake, soy sauce, and grated ginger. Refrigerate for 30 minutes


2. Add oil in a pan and wait until it is hot enough. Meanwhile, take the marinated chicken and coat it with corn starch

 
3. Add chicken pieces cautiously and deep fry until it is golden brown. Place on tissues to drain excess oil


4. In a separate pan, add sweet chilli sauce and add 2 tbsps of water. On medium heat, add coriander to the sauce and mix well

 
5. Add the chicken to the bubbling sauce and give it a good stir. Transfer into a bowl and serve with rice!
