1. Simply Roasted Butternut Squash

Ingredients: 

  • 1 butternut squash – peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Salt and ground black pepper to taste

Instructions: 

1. Before starting this recipe, preheat your oven to 200 degrees C

2. To a large bowl, add the butternut squash, olive oil and garlic. Toss together until properly combined

3. Season the tossed squash with some salt and pepper

4. On a baking sheet, arrange the coated butternut squash. Ensure that the pieces are not one on top of the other 

5. Add the baking tray to the oven and roast for 25 – 30 minutes or until the squash gets a golden brown hue

1. Start by heating your grill to high

2. In an ovenproof frying pan, toss the asparagus and olive oil together until properly combined

3. Cook on the fire until the asparagus softens

4. Remove the cooked asparagus from the pan and leave aside 

5 In a bowl, combine the eggs with half of the pesto 

6. Add the half of the egg mixture to the pan and cook it 

7. Repeat point 6 with the other half of the egg mixture

8. Drizzle the remaining pesto on the eggs and serve with a side of asparagus 

3. Spicy Garlic Edamame

Loaded with a ton of flavour, protein, fibre and good carbs, this recipe is bound to end all your snack cravings.

Ingredients: 

Instructions: 

1. Add a pot of purified water to your stove and bring it to a boil over high heat

2. While the water is on the stove, in a large mixing bowl, add the garlic, toasted sesame oil, sea salt and red chilli flakes 

3. Mix the ingredients together until you get a sauce-like consistency 

4. When the water comes to a boil, add the edamame beans to it and cook the beans for 2-3 minutes 

5. Once the edamame beans are cooked, drain the water and add the cooked beans to the mixing bowl

6. Toss the beans with the other ingredients and ensure that all of them are well combined (you can also use a spoon for this)

7. Serve at room temperature or keep it in your refrigerator and eat cold
