- ZucchiniMushroom Pasta
Ingredients:
- spaghetti
- 500 grams mushrooms, thinly sliced
- 2 zucchini, thinly sliced and quartered
- 2/3 cup Nature’s Green Peas
- 2 garlic cloves, thinly sliced
- 2 sprigs Healthy Alternatives Organic Thyme
- Healthy Alternatives Lake Salt Powder, to taste
- freshly ground black pepper, to taste
- 1/3 cup grated parmesan
- 1/4 cup heavy cream
Instructions:
- In a large stockpot, over medium-high heat, combine the spaghetti, mushrooms, zucchini, peas, garlic, thyme and 4 1/2 cups water
- Season it with salt and pepper, according to your taste and bring the water to a boil
- Reduce the heat and leave the water to simmer, uncovered, for 8-10 minutes or until pasta is cooked through
- Stir in the Parmesan and heavy cream
- Serve immediately
2. Baked Zucchini Fries
Ingredients:
- 1 cup breadcrumbs
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- Healthy Alternatives Lake Salt Powder, to taste
- freshly ground black pepper, to taste
- 4 zucchini, quartered lengthwise
- 1/2 cup Healthy Alternatives Organic Whole Wheat Flour
- 2 large Healthy Alternatives Free Range Country Eggs, beaten
- 2 tablespoons chopped fresh parsley leave
Instructions:
- Start with preheating the oven to 218 degrees C
- Place a baking sheet on a rack and spray with non-stick oil
- In another bowl, combine the Panko, Parmesan and Italian seasoning
- Season with salt and pepper and set aside
- Take the sliced pieces of zucchini and dip them into flour, eggs, and roll them in breadcrumbs respectively. Make sure that they are coated evenly
- Place the coated zucchini pieces onto the prepared baking sheet
- Place it into the preheated oven and bake for 20-22 minutes, or until golden brown and crisp
- Garnished with parsley and serve immediately
