Zucchini All Day, Every Day

We’ve seen them make appearances in our Asian and continental cuisine and loved them. With the different flavours and textures that zucchinis add to the dish, they will always find a way to be on our favourites list. That being said, did you know they are a powerhouse of benefits?

  1.  ZucchiniMushroom Pasta



  1. In a large stockpot, over medium-high heat, combine the spaghetti, mushrooms, zucchini, peas, garlic, thyme and 4 1/2 cups water
  2. Season it with salt and pepper, according to your taste and bring the water to a boil
  3. Reduce the heat and leave the water to simmer, uncovered, for 8-10 minutes or until pasta is cooked through
  4. Stir in the Parmesan and heavy cream
  5. Serve immediately

2.  Baked Zucchini Fries



  1. Start with preheating the oven to 218 degrees C
  2. Place a baking sheet on a rack and spray with non-stick oil
  3. In another bowl, combine the Panko, Parmesan and Italian seasoning
  4. Season with salt and pepper and set aside
  5. Take the sliced pieces of zucchini and dip them into flour, eggs, and roll them in breadcrumbs respectively. Make sure that they are coated evenly
  6. Place the coated zucchini pieces onto the prepared baking sheet
  7. Place it into the preheated oven and bake for 20-22 minutes, or until golden brown and crisp
  8. Garnished with parsley and serve immediately
