They are also a great way to experiment with the fruits and vegetables that are in during the season to make stellar dishes. This summer, you can diversify the salad menu with a variety of recipes. - Cauliflower Salad
Cauliflowers are known to be full of anti-toxins that prevent cancer and are super healthy for the body. It is rich in fibre and vitamins that also strengthen the bones and boost immunity. According to some research, eating cauliflowers on a daily basis also keeps the risk of cancer and obesity away. We have come up with a recipe that includes this nourishing veggie with a fun twist.
Ingredients:
- A large cauliflower, broken down into florets
- 7 bacon slices
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 ½ tbsp. lemon juice
- 1 tsp garlic powder
- 1 ½ tbsp. kosher salt
- 1 tbsp. ground black pepper
- 1 ½ cup cheese shredded
- ¼ cup chives finely chopped
Instructions:
- Take a large skillet and fill ¼ of it with water. Bring it to a boil
- Add the cauliflower florets and cover the pan. Bring it to steam for 4 minutes till they turn tender
- Drain the water and let the florets cool
- In another skillet, cook the bacon till they are crispy; 3 minutes on each side
- Transfer the bacon to a kitchen towel to drain excess oil and chop into small pieces
- In a large bowl, mix in the sour cream, mayonnaise, lemon juice, and garlic powder and give it a good mix
- Add the cauliflower into the bowl and sprinkle salt and pepper
- Distribute the bacon evenly into the bowl and garnish it with cheddar and chives as you plate it up
2. Cucumber Greek Salad
This salad is absolutely easy to make and is a delight to the eyes as well. With a burst of flavours in your mouth, this cucumber salad makes sure to keep your body cool and hydrated as the cucumber is majorly filled with water. Read on to know how to make this delicious and healthy summer salad.
Ingredients:
- 2 big cucumbers
- ½ kg tomatoes cut into wedges
- ½ cup sliced olives
- ½ cup sliced green onion
- 680g crumbled feta cheese
- 1 tbsp. oregano seasoning
- 2 tbsp. extra virgin olive oil
- 2 tbsp. white wine vinegar
- ½ tsp. peppercorn cracked
- ¼ tsp. kosher salt
Instructions:
- Shave the cucumbers with the help of a vegetable peeler and cut them into strips
- Add the cucumber strips, tomato wedges, and olives on a platter and toss them
- Sprinkle the feta cheese, green onions and oregano powder on top
- Drizzle olive oil evenly on top
- Sprinkle salt and pepper on the salad and mix it well. Voila! Your meal is now ready to be served
3. Corn Salad
The sweet summer corn has made their way this season and we have come up with a salad that is equally creamy. This Mexican dish can also be used as aside. So carry on to know how to prepare this dish.
Ingredients:
- 6 whole corns, stripped kernels
- 1 ½ tbsp. salt
- ½ cup mayonnaise
- ¼ cup feta cheese
- 2 juiced lemons
- 2 tbsp. cilantro chopped
- 1 ½ tbsp. chilli powder
Instructions:
- Fill ½ a saucepan with water and add salt in it
- Bring it to a simmer and add the kernels. Cover with a lid and let the corn cook for 3-4 minutes till it gets tender
- Drain the excess water and pat the corn dry
- In a big bowl add the corn, mayonnaise, juiced lemon, 1 tbsp. cilantro and chilli powder and toss it well
- Season the mixture with salt
- Transfer the mixture to a serving plate and garnish it with the leftover cilantro. And here you have your dish!
