Summer Season is here and so are the mangoes! It is an amazing fruit to be included in recipes and a lot can be done with it. With a variety of mangoes available in the country, you can always come up with dishes that will never fail to surprise you. This juicy and divine fruit is also filled with nutrition. - Mango Halwa
Hailing from India itself, this mango dessert is one of the favourites amongst the population. The mango halwa is a delicacy that can be cooked within 40 minutes. There is only one rule to this recipe; do not use mangoes that are fibrous. Read on to know how to make this dish.
Ingredients:
Instructions for mango puree:
- Take 2 mangoes, rinse them thoroughly and peel them to start the process
- Chop them into cubes and put them in the blender along with a little water
- Once done mixing them, store it in the refrigerator for half an hour
Instructions for Mango Halwa:
- Now, add the mango puree in a non-stick pan and cook for 2 minutes
- Add sugar and stir it for 2 minutes with the flame on low
- Once the sugar is thick and runny, add 1 tsp. of ghee at equal time intervals. Keep stirring on low flame. Keep on cooking till the ghee starts to firmly stick to the surface of the vessel
- After a certain time, the mixture will be collected and rolled like a paper ball. Add the remaining ghee to the mixture and bring it together. You will see a glossy texture on the halwa
- In a different utensil, fry the cashews in 1 ½ tbsp ghee till they give a light brown shade. Give it a good mix and serve it on a plate.
2. Mango Coconut Rice Pudding
Have some leftover rice at home? Well, not a problem. Let your main course turn into dessert! This pudding will give a tropical feel with every bite you savour. With a blend of such versatile elements in the dish, your taste buds will go completely gaga!
Ingredients:
- 2 cups well-shaken coconut milk
- 2 cups cold plain white rice
- ½ cup sugar
- 1 tsp. salt
- 1 tsp. vanilla extract
- ¾ cup toasted coconut flakes
- 1 ½ cup peeled and sliced mango
Instructions:
- Combine the rice, coconut milk, sugar and vanilla extract in a non-stick pan. Put the flame on high and give it a good stir till it starts to boil
- Keep the pan covered for 20 minutes till the rice soaks up the liquid and becomes thick in consistency. Turn off the flame once the consistency is acquired
- Add 1 cup of mango and blend it till it is well incorporated
- Set the dish aside to cool and garnish it with the leftover mango and coconut to serve.
3. Mango Lassi Parfait
This layered cold dessert is a visual treat but that is not all it offers. This dessert captures the combination of the French and Indian cuisines that will make your mouth water. Ingredients:
- 6 cups Greek yoghurt
- 1 tbsp. honey
- 1 tbsp. sugar
- 4 cups mango puree
- 2 cups diced mangoes
- 2 cups basil seeds/chia seeds soaked in water
- 4-5 mint leaves

Instructions for Mango Lassi Parfait:
- Take a small bowl and combine 4 cups of Greek yoghurt, honey, and sugar. Whisk it well and keep it aside
- In a glass, layer the basil/chia seeds at the bottom and set it
- Add 1 cup of the diced mangoes on top of the seeds
- Add the yoghurt mixture on top of the diced mangoes
- Now, pour the puree above the yoghurt mixture till the brim of the glass
- Garnish the dish with remaining chunks of mango and mint leaves to serve
