  1. In a small bowl, combine all the spices (salt, paprika, black pepper, cayenne pepper, dry mustard, nutmeg, cinnamon, cardamom, allspice, ground cloves, and ground ginger)
  2. Now, heat the pan on high for 1 minute and add the shrimps with olive oil
  3. Add ½ of the seasoning into the pan and give the shrimp a good mix
  4. Turn the shrimp over after 3-4 minutes until cooked perfectly
  5. Transfer the shrimp onto a plate and garnish it with parsley and the rest of the seasoning
  6. Give it a good toss before serving.

2. Grilled Eggplants with Tomato Salad

  1. Brush the eggplant with a ¼ cup of extra virgin olive oil and place on the grill, keeping it on medium heat

  3. Take a bowl and whisking, chillies, lemon juice, vinegar, ½ tbsp. salt and remaining 3 tbsp. oilwell to make a tasty sauce

 Ingredients:

  • ½ kg cubed boneless skinless chicken breasts
  • 1 tbsp. peanut oil
  • ¾ cup fresh chopped mushrooms 
  • 1 can drained and diced chestnuts
  • 1 ½ cup shredded carrots
  • ½ cup finely sliced green onion
  • 12 lettuce leaves
  • 1/3 cup toasted almonds

Instructions:

  1. Take a non-stick pan and sprinkle cooking spray on a medium heat
  2. Add 1 tbsp. peanut oil and cook the chicken for 3 minutes
  3. Now, add the mushrooms, chestnuts, and ginger and leave it for another 4 minutes until the chicken is completely cooked through. Drain the excess oil and set it aside
  4. Take a new bowl and add the carrots, green onion along with the chicken mixture and stir
  5. 5.       Take a spoon full of the chicken mix and place it on the lettuce leaf. Fold and roll the lettuce to keep the mixture from falling off
  6. Garnish the dish with toasted almonds.
