Classic Date Cake
Ingredients:
- 1½ cups water
- 1½ cup raisins
- ¾cup dates
- 1tsp. baking soda
- ½cup butter
- ¾cup white sugar
- 2 eggs
- 1tsp. vanilla sugar
- 1½ cups all purpose flour
- ¼tsp salt
- 4tbsp. butter
- ½cup brown sugar
- 2tbsp. heavy cream
- ½ cup chopped walnuts
Instructions:
- Preheat oven to 350 degrees F (175 degrees C)
- Grease and flour a 9 inch square pan. In a saucepan, combine water and raisins
- Bring to a boil and cook for 5 minutes
- Remove from heat and stir in chopped dates and baking soda and set aside
- In a large bowl, cream together 1/2 cup butter and 3/4 cup white sugar until light and fluffy
- Beat in the eggs one at a time, then stir in the vanilla
- Beat in the flour, salt and date mixture
- Pour batter into prepared pan
- Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean
- Remove cake from oven, and set the oven to Broil
- Make Topping: In a saucepan, melt 4 tablespoons of butter
- Stir in brown sugar, cream, and chopped nuts
- Spread mixture over warm cake and place under broiler until lightly browned, about 3 minutes
- Watch carefully – it burns easily under the broiler
- Cool before serving.

- 20-25 dates
- 2 cups of milk
- ¾ cup ofsugar
- 2 cups wheat flour
- 1 tsp. baking soda
- ¾ cup oil
- 1 tbsp. cashew nuts
- 1 tbsp. almonds
Instructions:
- Chop the dates and soak in milk overnight
- (If you don’t have time to chop and soak the dates
- In a microwave safe cup/bowl add the milk and dates and microwave it for 2 minutes and let it cool for 10 minutes
- Preheat the oven at 220°C
- Blend the soaked dates, milk and the sugar and bring it to a smooth paste
- Shift it to a bowl and add oil to it. Now add the flour gradually and mix it
- Add the chopped cashew and almonds while saving a little for later on
- Line a butter paper to the baking tin
- Pour the batter to the baking tin and sprinkle the saved nuts and almonds at the top
- Bake at 180°C for 40 minutes or until the toothpick doesn’t come out clean
- Take out and let it cool for 10-15 minutes
- Once cooled turn upside own, remove the butter paper and it’s ready to cut.
