1. Black Plum ginger Lemonade

Ingredients:
• 6 black Plum
• 1 tbsp. grated ginger
• 1/2 cup water
• 4 tsp sugar
• 1/4 tsp Rock Salt
• 500 ml Club Soda
• 1 Lemon
• 6-8 Mint leaves
Instructions:
1. Take out the seeds from the black plum and set aside
2 Now in a blender, add ginger, black plum and water
3. Blend it finely and strain it
4. Now, take a lemon and roll it over on the platform to squeeze out the juice easily
5. Divide them into half and squeeze out the juice
6. Now, in a bowl, mix – black plum ginger juice, lemon juice, sugar and salt
7. Pour this mixture in a serving glass
8. Before serving, add club soda with ice cubes
9. Garnish with lemon slices and mint leaves.
2. Ice Apple Kheer

Ingredients:
• 10 ice apple, peeled and chopped
• 1/4 cup Condensed Milk
• 1 lt. Milk
• 10 Whole cashews
• 10 Badam (Almond), soaked and peeled
• 1 teaspoon Cardamom Powder (Elaichi)
• Rose Petals, as required, for garnishing
Instructions:
1. First, chop the ice apple into small pieces and refrigerate them for an hour
2. Now, soak the cashews and almonds for about an hour in warm water
3. After they’re well soaked, take a grinder and grind them into a smooth paste
4. Now, in a saucepan, add the milk and let it boil. Once it is boiled, add the cashew and almond paste
5. Mix well until its combined
6. Allow the mixture to boil for 5 minutes
7. Now add in the condensed milk and let it simmer for 10 minutes on low heat
8. Turn off the heat and set it aside to cool
9. Once your milk mixture is cooled, add in the chopped ice apple and cardamom powder
10. Now, set it in the fridge to cool
11. Garnish with rose petals and serve.
3. Apple and Fig Custard

Ingredients:
• 4 tbsp. Unsalted butter
• 2 tbsp. powdered sugar
• ½ cup granulated sugar
• 2 tsp. grated lemon zest
• 1 vanilla bean
• 2/3 cup whole milk
• ½ cup all-purpose flour
• 1 tsp. kosher salt
• 4 large apples
• 2 bowl fresh figs
Instructions:
1. Start by preheating your oven to 450 degrees Celsius
2. Now, take a baking try and grease it with butter and sprinkle with powdered sugar
3. Take your blender, add in the eggs and blend them for 1 minute until very frothy
4. Now add the milk in the blender while its frothing the eggs
5. Combine sugar, salt and flour into the blender and blend until smooth
6. Now in a saucepan, add the remaining butter and let it turn brown (do not let it burn)
7. Remove from the heat and add in the apples, sugar and pinch of salt
8. Toss it to coat evenly
9. Now on a baking sheet, arrange the apples and roast them in the oven for 20-30 minutes
10. Once they are caramelized allow them to rest
11. Now, take the greased tray and add the apples and figs
12. Pour the custard on top of the fruits and add remaining slices on top
13. Now, bake it for 30-35 minutes at 375 degrees Celsius
14. Bake until the custard turns golden and center is firm
15. Let it cool slightly before serving.
4. Rose and Tender Coconut Ice Cream
Summer days’ call for something cooling and refreshing. This rose and tender coconut ice cream is the ideal dessert for summer nights! It’s simple yet exotic and super delicious. Read on to prepare this at home.
Ingredients:
• ½ cup chopped rose petals
• A few drops of rose essence
• ½ cup tender coconut
• 2 ½ cup cold milk
• ¾ cup sugar
• 2 tbsp. corn flour
• ¾ cup fresh cream
Instructions:
1. In a medium bowl, combine the corn flour and milk. Mix the same well. Set aside
2. Take a deep nonstick pan and add the remaining milk, sugar and mix well
3. Now, allow it to boil continuously for 3-4 minutes, stirring continuously
4. Add the corn flour mixture to the milk, mix well and cook on a medium flame
5. Remove it from the heat and allow the mixture to cool down completely
6. Once cooled, add fresh cream and mix well
7. Now, pour the mixture into shallow aluminum container and freeze for 6 hours
8. Pour the mixture into a blender and blend until smooth
9. Now, transfer back the mixture into the same aluminum container
10. For the flavouring, mix – rose petals, rose essence, tender coconut
11. Now, add the flavouring mixture to the blended milk mixture and mix well
12. Cover it with aluminum foil and freeze for 10 hours or until set.
5. Jackfruit Tacos
Jackfruit is a large fruit that grows in the tropical regions of southeast Asia and is available all around the world. Enjoy this recipe of smoky spicy taco which is a holy union of tacos and Jackfruit. Read on to make these lip-smacking recipe at home!
Ingredients:
• 500 gm unripe jackfruit (kathal)
• 2 tbsp. olive oil
• 1 large size onion roughly chopped
• an inch piece of ginger peeled
• 3 – 4 cloves of garlic
• ¾ cup barbeque sauce
• 1 tsp. dried oregano
• 1 tsp. ground coriander
• 1 tsp. chilli powder
• ½ tsp. smoked paprika
• ½ tsp. kosher salt
• 1 tsp. grated orange zest
• 10 (6 inch) corn tortillas
• 1 ripe avocado
• 4 radish thinly sliced
• ¼ cup sour cream
• ¾ cup cilantro leaves
• 1 lime cut into wedges
Instructions:
1. In a medium pot of boiling water, add the jackfruit and allow it to cook
2. Now, using your fingers and forks break apart the chunks of jackfruit into shredded pieces
3. In a large saucepan, over a medium heat, heat the olive oil
4. Now, add in the onions and cook until translucent for about 5 minutes
5. Stir in the garlic and jalapeno and cook for another 1 minute, until the garlic is fragrant
6. Combine the shredded jackfruit into the onions and stir well
7. Add in the barbeque sauce, cumin, oregano, coriander, paprika and salt to the pan
8. Now, stir to evenly distribute the spices and cook for 4-5 minutes
9. To assemble the tacos, warm the tortillas and add a spoonful of jackfruit stuffing
10. Now, top the tacos with avocados, radish and cilantro
11. Before serving add a dash of sour cream to the tacos.
