It is summer-time and what better to rejoice it than by making some of these delicious savoury Mango dishes. We have gathered some of these mouth-watering and tasty recipes for you to try at the comfort of your home.
- Mango Chutney
- 1 Tbsp coconut oil
- 1/2 cup finely chopped red onion
- 1-2 small serrano peppers
- 3/4 cup finely chopped red bell pepper
- 2 Tbsp fresh minced ginger
- 1/4 tsp red pepper flakes
- 1 Tbsp curry powder
- 3 cups chopped ripe mango
- 1/2 cup mango or orange juice
- 1 Tbsp apple cider vinegar
- 3-4 tbsp coconut sugar
- 1 Pinch sea salt
- 1/4 tsp garam masala
Instructions:
- In a small saucepan over medium heat, add coconut oil, red onion, serrano pepper, red bell pepper, ginger, red pepper flakes, and curry powder
- Allow it to cook for 3 minutes, stirring occasionally
- Then add the remaining ingredients and cover
- Cook on low heat for 20-30 minutes. The mango should be soft but not entirely puréed/mushy
- Serve with roti or paratha of your choice.
2. Mango Salsa
Ingredients:
- 3 ripe mangos, diced
- 1 medium red bell pepper, chopped
- ½ cup chopped red onion
- ¼ cup packed fresh cilantro leaves, chopped
- 1 jalapeno, seeded and minced
- 1 large lime, juiced
- ⅛ to ¼ teaspoon salt, to taste
Instructions:
- In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeno
- Now, drizzle with the juice of one lime and mix well
- Season with salt to taste. For best flavour, let the salsa rest for 10 minutes or longer.
3. Mango Pickle
Ingredients:
- 2 1/4 pounds raw green mangoes
- 1 cup of sea salt
- 3 tablespoons fennel seeds
- 4 1/2 teaspoons mustard seeds
- 1 tablespoon kalonji
- 1 tablespoon fenugreek seeds
- 5 tablespoon red chilli powder
- 2 teaspoons turmeric powder
- 3 cups mustard oil
Instructions:
- In a large bowl, mix all the ingredients
- Sterilize and thoroughly dry a 1-quart glass pickling jar or any airtight container
- Put the mangoes in the jar and cover with salt
- Now, mix well and cover the jar tightly
- Leave the jar out in the sun for 1 week so that the mangoes soften
- In a small bowl, mix the fennel seeds, mustard seeds, kalonji seeds, fenugreek seeds, chilli powder, and turmeric together
- Now, add this prepared spice mix to the mangoes
- In a small skillet, heat the mustard oil until it smokes and then turns off the heat. Allow the oil to cool fully
- Pour this oil over the mangoes so that all the pieces are submerged and mix well
- Put the tightly covered jar back in the sun for two weeks. Stir every day to mix well
- Eat with parathas, bread or with roti and any vegetable of your choice.
