- 2 Minute Egg Omelette In A Mug
Ingredients:
- 2 eggs
- 1 tbsp. diced roasted red peppers
- ¼ cup spinach
- 1 tbsp. feta cheese
- 1 tsp. sliced green onions
- Pepper to taste
Instructions:
- Spray the inside of the coffee mug with cooking spray
- Add the eggs to the cup, and using a fork, whisk until the yolks are combined
- Add in the roasted red pepper, spinach, feta cheese, green onions, and pepper to taste
- Gently stir all the ingredients together
- Place the coffee mug in the microwave and cook on high for 1 minute and 30 seconds
- Remove the mug and let it sit for 1 minute
- Serve Hot!
2. Bacon CheeseMacaroni
Ingredients:
- 5 slices of bacon, chopped
- 1 lb lean ground meat
- 3 ½ cups high fibre macaroni
- 1 ½ cups chicken broth or water
- 2 cups 1% milk
- ½ tsp salt or more, to taste
- Additional ¼ – ¾ cup 1% milk if needed
- 2 ½ cups shredded cheddar cheese
- Chopped green onions
Instructions:
- In a large pan, cook bacon over medium-high heat until crisp
- Remove the bacon from the pan and place the bacon on a paper towel to soak up excess oil and grease
- To the pan add the minced meat. Cook over medium-high heat, stirring often until the meat browns
- Drain the excess liquid or fat if there is any
- To the meat, add the macaroni, broth/water, milk, salt and half of the cooked bacon
- Bring the gravy to a simmer over medium heat, cover it and cook for about 10 minutes, stirring often
- If all of the cooking liquid is used up before the pasta is cooked, gradually add in the additional milk
- After 10 minutes, continue cooking the gravy uncovered, stirring and adding milk if required, until the pasta is al dente (You’ll want a little extra liquid in the pot because the cheese will thicken the gravy)
- Add in 2 cups of cheese, and stir until melted
- Garnish with remaining cheese, bacon, and green onions if desired.
3. Chocolate Peanut Butter Jelly Overnight Oats
Ingredients:
- ½ cup old fashioned oats
- 2/3 cup skim milk
- ½ cup greek vanilla yoghurt
- 2 tbsp. peanut butter
- 1 tbsp. cocoa powder
- 1 pinch of salt
- ¼ cup mashed banana
- 1/2 cup raspberries
Instructions:
- Place all the ingredients, except the raspberries and additional toppings in a medium-sized bowl.
- Stir until combined and then gently fold in ¼ cup raspberries
- Store the mixture in an airtight container, like a mason jar, in the fridge overnight
- In the morning, add some additional toppings if desired and enjoy!
4. Skinny Fried Egg and Avocado Toast
Ingredients:
- 2 Eggs
- 2 slices of Bread
- 1 small Avocado
- 1 tsp. Lime Juice
- Sea Salt to taste
- Black Pepper to taste
- Parsley to garnish
Instructions:
- In a small pan, fry the eggs as per your preference and add some salt and pepper to it
- Peel the avocado and mash the flesh in a mixing bowl
- To the mashed avocado, add the lime juice, sea salt, black pepper and parsley
- Now, spread the avocado mix on the bread slice and top it off with the fried egg
- Enjoy with a hot cup of coffee!
