Afternoon cake and tea is by far the best combination. If you are hosting a tea party for your family, you can prepare these delicious and light tea time cakes to pair with your tea. From refreshing lemon to rich walnut these cakes are the perfect siders to pair with a cup of hot tea!
- Walnut Date & Honey Cake
Ingredients:
- 250 gm of all-purpose flour
- ½ tsp of cinnamon
- 175 gm butter
- 100 gm granulated sugar
- 3 tbsp of honey
- 2 eggs beaten
- 2 medium ripe banana
- 100 gm dates
- 50 gm walnut pieces
Instructions:
- Preheat the oven to 160-degree celsius
- Now, line the base and long sides of a loaf tin with parchment paper, buttering the tin and paper
- Mix in the flour, cinnamon, butter, sugar, 2 tablespoons of the honey and the eggs into a large mixing bowl
- Mash the bananas and chop the dates and add to the bowl
- Now, beat the mixture for 2-3 minutes, using a wooden spoon or hand-held mixer, until well blended
- Spoon into the prepared tin and level the top to ensure there are no air bubbles
- Scatter the walnut pieces over and bake for 1 hour, then lightly press the top
- Cool for 15 minutes, then lift out of the tin using the paper. When the cake is cooled down, drizzle the remaining honey over
- Serve during tea time!
2. Little Toffee Cake
Ingredients:
- 3 tbsp sunflower oil
- 1 large apple
- 1 tsp vanilla extract
- 110 gm of self-raising flour
- 50 gm caster sugar
- 3 soft toffees
Instructions:
- Ask your grown-up helper to switch the oven on to 190 degree celsius
- Peel the apple with a potato peeler, then cut it into quarters and cut out the core
- Now, grate the apple using a rotary or box grater and put it in a large bowl
- In a small bowl, break in the eggs and add to the apple
- Now, add the flour and sugar and stir together
- If the mixture is quite stiff then keep going until all of the flour is mixed in. Scrape into the prepared tin.
- Push 3 toffees into the mix in a row and cook for 30 – 35 minutes
- Cool the cake before tipping out and slicing.
3. Lemon Cake
Ingredients:
- 1 cup of unsalted butter
- 2 ½ cups of granulated sugar
- 4 eggs
- ⅓ cup grated lemon zest
- 3 cups of all-purpose flour
- ½ tsp of baking powder
- ½ tsp of baking soda
- 1 tsp kosher salt
- ¾ cup of squeezed lemon juice
- ¾ cup of buttermilk
- 1 tsp of vanilla extract
Instructions:
- Preheat the oven to 220 degrees celsius
- Now, sprinkle some flour to the loaf pans to coat it
- You can also line the loaf pans with parchment paper
- Now, in a mixing bowl, cream the butter with sugar in a medium bowl until light and fluffy
- Now, you can add the eggs one at a time on a medium speed
- Add in the lemon zest and sift the flour, baking powder, baking soda and salt in a bowl
- Now, in another bowl, combine lemon juice, the buttermilk and vanilla
- Mix in the dry ingredients into the wet ingredients and combine the two
- Gently fold in the batter and make sure you don’t lose out on the air formed
- Now, place it in the oven and allow it to bake for 45 minutes
- Serve with tea and enjoy!
