  1. Honey Truffle and Cheese Bruschetta



  1. To prepare a bruschetta you need to begin with the tomato mixture
  2. Heat the olive oil in a small skillet or saucepan, add garlic and sauté until just starting to turn golden
  3. Pour into a large mixing bowl and let cool while you chop the tomatoes and basil
  4. Now, pour the tomatoes into the bowl with cooled oil mixture. Add the ricotta basil, balsamic vinegar, salt, and pepper. Toss mixture well. Serve right away over toasted bread and garnish with more parmesan if desired
  5. To toast the bread: Align bread slices on an 18-by-13-inch baking sheet

  6. Now, cook until the bread is toasted and cheese melts, about 3 minutes per side
  7. Cut each sandwich into 8 triangles and place on a serving dish
