Types Of Lipsmacking Indian Chaat

  1. Dahi Puri

Ingredients:

  • 3 medium-sized boiled, peeled potatoes
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • ¾ cup curd
  • ½ cup mint coriander chutney
  • ½ cup tamarind chutney
  • ½ cup red chilli garlic chutney
  • 24 to 30 gol gappas
  • 500 gm sev
  • 1 tsp. chaat masala
  • 1 tsp. roasted cumin powder
  • 1 tsp. black salt or rock salt as required
  • Coriander leaves for garnish

Instructions:

  1. In a plate, arrange the puris and create a hole in the middle of each puri
  2. Stuff the potatoes in each puri
  3. Add the chopped onions and tomatoes on top of the puris
  4. Sprinkle some chaat masala, cumin powder, red chilli powder, and black salt onto the puris
  5. Top the puris with mint, tamarind, and red chilli chutney
  6. In a small bowl, whisk some curd until it gets a runny consistency
  7. Spoon the curd into each of the puris and sprinkle some chaat masala on top
  8. Garnish with sev and coriander. Enjoy!

2. Ragda Pattice

Ingredients:

Instructions:

  1. Start by adding the soaked white peas and 2 cups of water in a pressure cooker vessel
  2. Let the peas cook for 6 whistles
  3. In a large pan, heat the oil over a low flame. Add the mustard seeds and cook it until it cracks
  4. Once the seeds are cracked, add in the onions and saute them over a medium flame
  5. Add in the cooked white peas and saute for 1 minute
  6. Add the turmeric, coriander and cumin seeds powder. Mix for 2 to 3 minutes until it combines
  7. Mix in 2 tbsp of water
  8. Garnish with coriander and keep it aside

To make the pattice:

  1. In a large bowl, combine the boiled potato with – ginger-garlic paste, green chilli paste and cornflour
  2. Divide the mixture into 8 equal parts and shape each portion into a flat circle
  3. In a large pan, heat some oil and cook the pattice until they turn golden brown
  4. To assemble the ragda pattice, take a wide bowl and place the patties and prepared ragda over it
  5. Pour 1 tsp of tamarind chutney and mint chutney over it
  6. Now, sprinkle some raw onions and sev
  7. Garnish with crushed paper and coriander
  8. Serve and enjoy!

3.  Pani Puri

Ingredients:

Instructions:

  1. In a large bowl, add the semolina, baking soda and salt and knead into a dough
  2. Cover the dough with a muslin cloth and set it aside for half an hour
  3. Once set, take out few small balls from prepared dough and roll them out into flat round Rotis
  4. In a large frying pan, add some oil and let it heat over a low flame
  5. Now, add in the rotis 3-4 at a time. Let them puff up
  6. Once cooked, take them out immediately and place them on a paper towel, to get rid of the excess oil
  7. With your thumb, make a hole at the centre of the puri
  8. Start by stuffing the boiled potato mixture into the puris
  9. Add in the layer of mint chutney and tamarind chutney alongside chilled pani
  10. Enjoy the delicious pani puri with your loved ones!
