It’s the holy month of Ramzaan and time to prep for some of the delicious iftar recipes. After a whole day of fasting, there’s nothing better than a beautiful iftar spread. To make your Ramzaan more special we have brought you the most delicious recipes that you can prepare at home and serve your family.
- Rice Pudding
Ingredients:
- 8 cups full-fat milk
- 1/2 cup of short-grain rice
- 1/2 cups sugar
- 1 tbsp.orange blossom essence
- Pinch of Saffron
Instructions:
- Wash rice well several times to loose starch
- Now, bring the milk into a boil and add the washed rice
- Bring the rice-milk mixture into a boil again
- Cook over medium heat for about 40 and 50 minutes, stirring now and then gently in order not to have your rice grains broken or stuck
- When the rice softens and the milk starts to thicken, which gives you an indication that your recipe is almost done, then add the sugar and stir into the mixture
- Remove from heat and stir in orange blossom essence and saffron
- Pour into individual serving bowls. Allow to cool, refrigerate and serve cold.
2. Chicken Pakora
Ingredients:
- 500 gms boneless chicken
- salt – to taste
- 1 tbsp red chilli powder
- 1/4 tsp turmeric powder
- 2 tsp ginger garlic paste
- 1/2 tsp garam masala powder
- 1/2 tsp roasted coriander seeds powder
- 1/2 tsp black peppercorn powder
- 3 tbsp chickpea flour/besan
- 1 tbsp cornflour
- egg white of 1 egg
- oil for deep frying
- 4-5 curry leaves
- 3-4 vertically slit green chillies
Instructions:
- In a large mixing bowl, add the boneless chicken pieces
- Add salt into it as per taste, add red chilli powder, turmeric powder, and ginger garlic paste as well
- Add coriander seeds powder, add garam masala powder, add in the black peppercorn powder
- Mix all the ingredients well and add the chickpea flour into it along with cornflour and mix it well
- Now, add egg white into it.
- Mix the whole mixture well, rest aside and marinate it for 5-10 minutes
- Add oil in a wok and heat it
- Add the chicken pieces into the oil and deep fry them until they turn golden red on a medium flame for 12 minutes
- Add slit green chillies and curry leaves into the oil
- Stir the chicken pieces up and down while frying
- Remove the fried chicken pieces from oil
- Place a tissue paper on a plate and serve the chicken pieces on them
- Serve them hot.
3. Mutton Bhuna Gosht
Ingredients:
- 1/4 cup cooking oil
- 3 pods green cardamom
- 1 pod black cardamom
- 2 bay leaves
- 1 cinnamon stick
- 6 large onions, sliced thin
- 6 cloves garlic
- 1 (1/2 inch) piece fresh ginger root
- 2 teaspoons Kashmiri red chilli powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- salt, to taste
- 2 tomatoes, pureed
- 2 pounds lamb chops
- 2 tablespoons water
- 3 green chilli peppers
- 1/4 cup cilantro leaves, for garnish
Instructions:
- Heat the oil in a large skillet over medium heat
- Fry the green cardamom pods, black cardamom pods, bay leaves, and cinnamon stick in the hot oil until aromatic
- Stir in the onions, garlic, and ginger into the mixture
- Now, reduce the heat to low and continue cooking until the onions are golden brown; season with the red chilli powder, turmeric, cumin, and salt
- Add the tomatoes and continue cooking until the oil separates from the gravy, about 5 minutes more
- Place the lamb chops into the mixture in the skillet and increase heat to medium-low
- Cook and stir until the lamb is cooked about halfway through and the sauce has created a glaze on the outside of the meat, about 20 minutes
- Sprinkle the water over the mixture
- Cover and cook until the lamb is tender, 15 to 20 minutes more
- Remove the cover and add the green chile peppers and cilantro leaves
- Increase the heat to high and cook another 3 to 5 minutes. Serve hot.
