  1. Preheat the oven to 200 degrees Celsius
  2. Bring a medium pot of salted water to a boil over high heat
  3. Add the pasta and cook until just tender, stirring occasionally about 5 minutes
  4. Drain pasta into a large mixing bowl
  5. Meanwhile, put the olive oil in a medium saute pan over medium heat
  6. Add the chicken and cook for 3 minutes
  7. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more
  8. Put the chicken mixture into the bowl with the cooked pasta
  9. Add the tomatoes, mozeralla cheese, parsley, salt, and pepper
  10. Stir to combine. Place the mixture in a buttered baking dish
  11. In a small bowl mix together the bread crumbs and the parmesan cheese
  12. Sprinkle over the top of the pasta mixture. Top with small bits of butter
  13. Bake until the top is golden brown for about 30 minutes

2.  Garlicky Greek Chicken

  1. In a large bowl, combine 2 tablespoons olive oil, lemon juice, garlic, and oregano
  2. Whisk until combined then add chicken thighs and toss to coat
  3. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 15 minutes and up to 2 hours
  4. When you’re ready to cook the chicken, preheat oven to 425° Celsius
  5.  In a large ovenproof skillet over medium-high heat, heat remaining tablespoon olive oil
  6. Season both sides of marinated chicken with salt and pepper, then add chicken skin-side down and pour in the remaining marinade
  7. Sear until the skin becomes golden and crispy, about 10 minutes
  8.  Flip chicken and add asparagus, zucchini, and lemons to the skillet
  9. Transfer pan to oven and cook until the chicken is cooked through and the vegetables are tender about 15 minutes
