1. In a blender or food processor, add all the ingredients and blend until you achieve a smooth consistency

Ingredients:

1. In a large jug, add the chia seeds, almond milk and 1 tablespoon of the maple syrup and mix until well combined

2. Let the batter stand for 3-4 minutes until the chia seeds swell 

3. In a small plate, finely grate the rind from the orange until you have enough to fill 1 tablespoon 

4. In another bowl, combine the flour, baking powder, orange rind and half of the walnuts 

5. Whisk in the batter until it is smooth before stirring in the blueberries 

6. Spray a little oil to a non-stick frying pan and heat it over a medium flame 

7. Add 1/2 cup mixture of the batter into the frying pan and cook for 2 minutes on each side or until each side is golden brown 

8. Garnish with the maple syrup, orange segments, ricotta and remaining walnuts

Instructions: 

1. Preheat your oven to 375 F and line your baking dish with some parchment paper

2. For the crust and topping, with a hand mixer fitted with a paddle attachment, mix together the baking powder, flour, salt and granulated sugar

3. To this, add the lemon zest, butter, eggs and vanilla. Mix on low speed until all the ingredients are well combined and the butter is evenly distributed and the mixture is crumbly 

4. Add half the mixture onto the bottom of the prepared pan and with the back of a measuring cup, evenly distribute the dough

5. For the filling, gently mix together all the ingredients

6. Spread the filling over the bottom layer of the dough and then crumble the remaining dough over the berries 

7. Bake the dough for approximately 40 minutes until the top of the dough is golden brown 

8. Transfer onto a cooling rack and cut the crumble into small squares

9. Enjoy!
