- Classic Pav Bhaji

For The Bhaji
- 1 cup potatoes
- 3/4th cup green peas
- 1 cup cauliflower
- 1/2 cup capsicum
- 2 tbsp. oil
- 2 medium onions
- 1 green chilli, chopped
- 1 tsp. ginger garlic paste
- 3/4 tsp. red chilli powder
- 1/4 tsp. turmeric powder
- 1 tbsp. pav bhaji masala powder
- 1 large tomato
- 3/4 teaspoon dried fenugreek leaves
- 1/2 tsp salt
For the Pav:
- 6 pavs
- 1 tbsp. butter
- 1/2 tsp. pav bhaji masala
The Garnish:
- 1 lemon, sliced
- 2 tbsp. chopped onions
- 2 tbsp. coriander leaves
- 1 tbsp. butter
Instructions:
- Add the cauliflower, potatoes and peas to a pressure cooker. Add a little water and cook for 2 whistles
- After 2 whistles, remove the vegetables and mash
- In another pan, over medium heat, add the oil and let it heat
- To this, add the onions and cook them until they turn translucent
- Once done, add the ginger-garlic paste and green chilli and mix
- Add the capsicum and saute
- To this, add the tomato and salt. Cook until the tomatoes become tender and soft
- Add the chilli powder and the pav bhaji masala powder to this and saute until the raw smell goes away
- Add the mashed vegetables to this mixture
- Pour a little water and cook for 5 minutes until the bhaji thickens. Garnish with Kasuri methi
- Slit the pavs horizontally and keep aside
- In another pan, heat the butter and pav bhaji masala
- Place the pav on the pan for 2-3 minutes until properly toasted
