  1. Mushroom Kadai



1. Make a coarse powder of coriander seeds and red chillies in a blender and set that aside

2. Now, add some oil to the pan and saute with ginger

3. Next up add the onions and saute until they are slightly pink

4. Stir in the cashews to the pan and set it aside

5. When cooled make a smooth paste of an onion-tomato mixture in a blender

6. Now, rinse the mushrooms well and slice them thinly

7. Add some oil to the pan and when it turns hot, add the mushrooms and saute for 3 minutes

8. Then add capsicum with the onion cubes and mix them all together

9. Now, mix all the spices together and add the mushrooms and allow it to cook for 10 mins

10. Make sure you cover it with a lid and allow the steam to pass

11. Once done, add the cream and turn off the stove

12. Garnish with some chopped coriander and serve.

2. Mushroom Omelette



  1. In a large mixing bowl, crack the eggs
  2. Now, heat a medium frying pan and add some oil
  3. Once the oil is hot enough, add some garlic and saute until fragrant
  4. Next up add the onions and saute until translucent. Add some salt to flavour the onions
  5. Stir in the tomatoes and coriander and cook them for 1 to 2minutes
  6. Add the cracked and whisked eggs to the pan and top it with the mushrooms
  7. Cover the pan with a lid and allow it to cook for 2 minutes
  8. Serve hot with some delicious buttery toast

2. Palak Mushroom

  1. Start by washing the spinach leaves thoroughly
  2. Now, in a large bowl,  boil some water and add the palak leaves to it
  3. Once done take them off and put them into ice water to make them stop cooking
  4. Now, once the leaves are cooled off blend them in a blender until a fine paste is formed
  5. In a medium skillet, add some oil and let it heat
  6. Stir in the garlic and onions and cook them until brown and fragrant
  7. Stir in the spices and add the palak paste into the skillet
  8. Cover it with a lid and add some salt to it
  9. Now, add in the mushrooms and allow it to cook for 10 minutes until the mushrooms are cooked
  10. Serve hot with your choice of bread and enjoy!
