Eggcellent Eggnog Recipes

  1. Frozen Eggnog Cream

For eggnog:

After all, eggnog is essentially an uncooked custard. Why not turn it into a creamy dream in the simplest way possible?

Ingredients:

Instructions:

  • In a large saucepan, warm milk and maple syrup. Add cinnamon and cloves and heat for 5 minutes on medium flame
  • Meanwhile, in a medium clean mixing bowl whip egg yolks until evenly light yellow
  • While whisking constantly, spoon about 2 cups of warm milk into the egg yolks. This will temper the eggs so that it doesn’t scramble when it hits the heat
  • Pour the tempered egg yolks back into the milk and whisk to combine
  • Combine to heat for another 5 minutes, but do not boil
  • Remove from the heat and strain out whole spices. Now, whisk in the nutmeg
  • Chill in the fridge for 1 hour. Top with a dash of nutmeg upon serving

For frozen eggnog cream:

Ingredients:

  • Prepared eggnog

Instructions:

  • Turn on ice cream maker and churn chilled eggnog for 20 minutes
  • Transfer ice cream into a freezer-safe container for at least 15 minutes before serving
  • Serve with some grated nutmeg and there! You have your perfect frozen dessert

2. EggNog Macaroons

This one is a uniquely sinful take on classic eggnog. You can make eggnog macaroons with leftover eggnog and it is just perfect for any occasion.

Ingredients:

  1. In a large bowl, combine all ingredients by hand until blended well
  • Form into balls an inch in diameter and flatten on baking sheet
  • Bake at 325 degrees Celcius for 20-25 minutes, until edges turn golden brown
  • Allow to cool it for 10 minutes before transferring on to a cooling rack

3. Overnight Cranberry – Eggnog Cake

Ingredients:

Instructions:

  1. In a large bowl, cream butter and sugar until blended. Add eggs, one at a time
  • In a small bowl, whisk eggnog, sour cream and vanilla
  • In another bowl whisk flour, baking powder, orange zest, baking soda and salt
  • Add to the creamed mixture alternating it with the eggnog mixture. Stir in the cranberries
  • Transfer to a greased baking pan. Refrigerate covered, at least 8 hours to overnight
  • Preheat oven to 350 degrees Celsius. Remove the cake mix from refrigerator while oven heats
  • Bake for 35-40 minutes. Cool for 20 minutes before serving
