- Salmon With Potato and Corn Salad
Ingredients:
- 400 gmspotatoes
- 2 sweetcorn cobs
- 4 skinless salmon fillets
- 2 large tomatoes
- 2 tbsp.vinegar
- 2 tbsp. extra virgin olive oil
- 1 onion, finely chopped
- 1 tbsp, capers
- A handful of basil leaves
Instructions:
- In a medium-sized kettle, addsome water and bring it to a boil
- Once the water is boiled, addthe potatoes and cook them until tender
- Once done, add the corn.Then drain and allow it to cool a little
- Now for the dressing, combinevinegar, oil, onions, capers, basil and someseasoning
- On high heat, place agrilling pan. Meanwhile, rub the preparedseasoning onto the salmon
- Now, place the seasoningskin-side down and cook it for 7-8 minutes
- Slice the potatoes, cut thecorn cob and arrange the tomatoes on a serving plate
- Top the salmon with the vegetables, and drizzle some of the dressing.
2. Jowar Tacos
Ingredients:
- ¾ cup jowar flour
- ¼ cup wheat flour
- 1 tsp baking powder
- ¼ tsp salt
- 40 gm cold butter
- 1 chicken breast, cut into small cubes
- 1 onion, ground into paste
- 1 tsp. fresh ginger
- 1 tsp. fresh garlic
- 3 ripe tomatoes
- 1 tsp. paprika
- Salt to taste
- ½ tsp. jaggery
- 1 tsp. dried herbs
- 2 tbsp. oil
Instructions:
1. In a large mixing bowl, sift together jowar flour, wheat flour, salt and baking powder
2. Now, add the butter cubes and start rubbing the mixture using your fingers until it resembles bread crumbs
- Pour some water into the flourmixture and continue kneading it until it forms asoft dough
- Wrap it with a cling-film andrefrigerate for 30 minutes
- To make the tacos,divide the dough into small balls and shape them into circular discs
- Now, heat a tawa (flatpan) and roast the tacos on both sides on medium flame until done
- Then transfer it to a preheated oven and set at 150 degrees Celsius and bake for 5 minutes
- In the meanwhile, tomake the filling – in a large pan, heat some oil
- Now, saute the onion,garlic and ginger pastes, until cooked for about 2-3 minutes
- Next up add thetomatoes and saute for 4 to 5 minutes until the mixture is nice and pulpy
- Add in the chickencubes and coat well with the mixture
- Allow it to cook for7-8 minutes until it is done
- To assemble, load thetacos with spicy chicken filling, fresh greens, cream cheese and serveimmediately.
3. Ragi Roti
Ingredients:
- 3 cups of ragi flour
- 1 onion, finely chopped
- 1 carrot, grated
- 10 curry leaves, finely chopped
- A small bunch of coriander leaves
- ¼ tsp, of chili powder
- 1 tsp of cumin seeds
- 1 tsp sesame seeds
- 1 cup of water
- ½ tsp of salt
Instructions:
- In a large mixing bowl, mix all of the dry ingredients well
- Now, sprinkle some water into the flour
- Keep adding the water until a required consistency to make it into balls
- Make sure you keep the dough moist because ragi dries out quickly
- Now, take a clean cotton napkin and keep the dough covered until you’re ready to make the roti
- Shape the dough into a flat circle and place it on the pan to toast
- Put little oil around the roti so that it helps the roti cook
- Cook the roti on the other side for one or two minutes and serve
- You can serve it with some curd or a chutney of your choice.
