Add A Twist To The Sweet with These Savoury Pancakes

When it comes to eating pancakes, can anyone say no? Whether for breakfast or a dessert, pancakes have definitely won the hearts of many. What if we told you that this delicious dish could be savoury as well as sweet? Well, read on to find out how to go about creating these dishes that you can definitely eat throughout the day.

1. Eggs Benedict Pancake

Can you think of anything better than the absolutely mouthwatering combination of poached eggs and light, fluffy pancakes? Read on to find out how to create this type of pancake. 

Ingredients: 

For The Pancakes: 

The Toppings: 

Instructions: 

1. In a medium-sized bowl, add all the pancake ingredients and mix them 

2. Add a small knob of butter to a frying pan over medium heat and let it melt. Keep it on the fire until it has started to foam up

3. Once the butter starts to foam, add 2 tablespoons of the pancake mixture to the frying pan. Using the back of the spoon, smooth the batter until you get the desired round shape

4. Cook each side of the pancake for 2-3 minutes or until brown on one side before flipping it over

5. Add all your pancakes onto a baking tray and add them to the oven in order to keep them warm

6 For the Eggs Benedict, add some water to a large pan and bring the same to a boil

7. In each egg into a separate ramekin and lower the same into the water

8. Poach the same for 2-3 minutes until the whites of the eggs are set and the yolk of the eggs are runny

9. Warm the hollandaise as per the instructions on the pack

10. To serve the pancakes, stack them with a layer of spinach leaves, ham and hollandaise in between each layer 

11. Top the stack with the poached egg and spoon a little hollandaise on top

12. Garnish with some chives and black pepper and serve hot!

2. Cheese And Ham Pancake Roll-Ups

This dish screams ‘Childhood’ and trust us when we say that this recipe will definitely bring out the inner child in you.

Instructions: 

The Pancakes 

For The Roll-Ups 

  • 12 thin slices of ham (125g pack), torn
  • 260g bag spinach, cooked
  • 140g grated cheddar
  • 100ml half-fat crème fraîche
  • 3spring onions, sliced (optional)
  • handful dried breadcrumbs

Instructions: 

1. In a mixing bowl, add the flour. With your hands, make a well in the middle of the flour and crack the eggs in the middle of the well

2. Add the butter and a little bit of the milk to the flour and mix until smooth

3. Keep whisking the batter while pouring the rest of the milk in. When the batter reaches the consistency of double cream, stop whisking it

4. To a pan over medium heat, add a little oil and heat it

5. Once hot, remove the pan from the fire and add some of the batter to the pan. Ensure that there is enough batter to cover the base of the pan and swirl it until it completely covers the base

6. Cook for 3 minutes or until one side is brown before flipping and cook the other side 

7. To make the roll-ups, butter a large baking tray and add the pancakes to it. On top of the pancake, add some spinach, ham and cheese

8. Carefully roll up the pancake 

9. In a small bowl, mix the crème fraîche with the spring onions and the cheese 

10. Add the breadcrumbs to the roll-ups and bake in the oven for about 30 minutes 

11. Serve hot with the crème fraîche side
