- Cheesy Bacon Breakfast Burrito
There’s no one specific way to make a breakfast burrito. You can make Cheesy Bacon breakfast burritos with these easy steps, and you’re guaranteed perfect results every time.
Ingredients:
- 8 slices bacon
- 8 large eggs
- 1/3 cup. Milk
- 4 tsp. butter
- Kosher salt
- Freshly ground black pepper
- 4 large flour tortillas
- ½ cup. Cheddar cheese
- 1 ripe avocado
- Hot sauce, for serving
Instructions:
- In a large skillet over medium heat cook bacon, working in batches if necessary, until crispy for about 8 minutes per batch
- Now, drain on a paper towel-lined plate and pour off half the fat
- Cook hash browns according to package directions in bacon fat and transfer to a plate
- In a medium bowl, whisk together eggs and milk
- Wipeout skillet, place over medium heat and melt butter
- When butter is just starting to foam, reduce heat to medium-low and add beaten eggs
- Using a rubber spatula, stir every occasionally until soft curds form
- Season with salt and pepper
- To assemble the burritos: In the centre of each tortilla, layer hash browns, scrambled eggs, cheese, two slices of bacon, and sliced avocado. Fold in the two sides and roll up tightly. Serve with hot sauce.

Ingredients:
- 1 kg. ground meat
- 1 tsp. chilli powder
- ½ tsp. cumin powder
- ½ tsp. smoked paprika
- Kosher salt
- Freshly ground black pepper
- 2 cups cooked white rice
- 1 tsp. lime juice
- 2 tsp. finely chopped cilantro
- 8 large flour tortillas
- 1 ½ cup cheddar cheese
- 1 cup. Nacho cheese sauce
- ½ cup. Sour cream
Instructions:
- Heat a medium skillet over medium-high heat then add the meat, chilli powder, cumin and paprika
- Season with salt and pepper and cook until beef is no longer pink about 6 minutes. Drain fat
- Now, in a medium bowl, toss together white rice, lime juice and cilantro using a fork. Set aside
- Heat a large nonstick pan over medium-high heat
- When the pan is hot, add a tortilla and sprinkle cheddar cheese all over
- Top with a second flour tortilla and cook until the cheese has melted, about 2 minutes per side
- Repeat with remaining tortillas and cheddar to make 4 quesadillas
- Working on a cutting board or plate, top the centre of one quesadilla with some rice, meat, nacho cheese sauce, and sour cream
- Now, roll up into a burrito. Repeat with the remaining ingredients.
- Reheat the nonstick pan over medium-high heat. When the pan is hot, add two quesaritos and cook until the outside quesadilla is golden and slightly crispy, 3 to 5 minutes per side. Serve immediately.
3. Old Bay Shrimp Burrito
Seafood lovers! This one’s for you! Once you take the old bay route, there’s no turning back. Made with the simplest of the burrito ingredients and some additional shrimp, this one can be prepared with ease, anytime. Read on:
Ingredients:
- 1/3 cup. Mayonnaise
- 1 ½ cup.Sriracha
- ¾ tsp. lime juice
- Kosher salt
- 1 tsp. extra virgin olive oil
- ½ onion, finely chopped
- 1 small green bell pepper, diced
- 2 cloves garlic, thinly sliced
- 1 kg, shrimp, peeled and deveined
- ¼ tsp. cumin powder
- ¼ tsp.paprika
- Kosher salt
- Freshly ground pepper
- 4 large tortillas
- 1 cup cooked long-grain white rice
- 1 cup cooked black beans
- ¾ cup shredded Mexican cheese
- 1 cup shredded lettuce
- 1 avocado thinly, sliced
- Old Bay Seasoning
- 2 tsp. chopped chives
Instructions:
- Start by whisking together mayo, Sriracha, lime juice, Old Bay, and 1 teaspoon of water. Season with salt, if desired
- In a large skillet over medium-high heat, add oil, onion, bell pepper, and garlic
- Now cook, stirring occasionally, until lightly golden, about 2 minutes
- Stir in shrimp, cumin, and paprika. Season with salt and pepper
- Cook, stirring occasionally, until opaque and just cooked through, about 4 minutes
- Lay a tortilla on a serving plate. Add 1/4 cup of each of the rice and beans
- Now, top with ¼ each of the shrimp filling, cheese, lettuce, pico de gallo, and avocado slices
- Sprinkle with chives and drizzle some aioli. Roll burrito tightly and repeat with remaining tortillas and ingredients
- Slice each burrito in half and serve with more aioli, Old Bay, and chives
