Red Wine Recipes That Are Absolutely Delicious

  1. One-pot chicken chasseur

Ingredients

  1. In a medium-sized casserole, add some butter and olive and allow it to heat 
  2. In a bowl, season the chicken legs with salt and shallow fry them in the casserole. Fry them for about 5 minutes on each side, until golden brown
  3. In the same casserole, add more butter, onion and garlic and fry them for about 4-5 minutes
  4. Now, stir in the mushrooms and red wine and cook for 2-3 minutes 
  5. Once the mushrooms are cooked, stir in the tomato puree, and allow it bubble
  6. Now, reduce the gravy and add in the chicken stock and the thyme sprigs 
  7. Once the sauce is reduced and thickened a little, add in the fried chicken legs 
  8. Now, cover the casserole with a lid and allow it to simmer for about 10 mins 
  9. Serve this chicken chasseur with a side of steaming hot mashed potatoes on a cosy winter night!

2. Chocolate red wine cake 

Ingredients:

Instructions:

  1. Preheat the oven to 350°. Butter and flour a 12-cup bundt pan. In a bowl, whisk the flour, cocoa powder, baking soda and salt
  2. In a large bowl, using a handheld electric mixer beat the butter with the sugar at medium-high speed until fluffy, 4 minutes
  3. Add the eggs, one at a time, and beat until incorporated
  4. Add the vanilla and beat for 2 minutes longer. Working in two batches, alternately fold in the dry ingredients and the wine, until just incorporated
  5. Scrape the batter into the prepared pan, and bake for 45 minutes, until a toothpick inserted in the centre comes out clean
  6. Let the cake cool in the pan for 10 minutes, then turn it out onto a rack; let cool completely
  7. Dust the cake with confectioner’s sugar and serve with whipped cream.

3. Creamy garlic parmesan spaghetti in red wine sauce

Ingredients:

Instructions:

1. Bring a large pot of salted water with one cup red wine to a boil

2.  Add pasta too and cook for only about 3-5 minutes, until al dente. Drain well using a colander, keeping 1 cup of the cooking liquid

3. In a large skillet, heat oil, garlic and chilli pepper on low heat

4. Now, gently cook about 5 minutes. Don’t let the garlic burn, it will be bitter otherwise

5. Add the remaining 1/2 cup red wine and cream. Increase the heat to medium

6. Now, add spaghetti to the skillet, tossing in the wine with tongs until wine is absorbed, add the reserved cooking water with wine to keep pasta wet

7. Test pasta for doneness, adjust seasoning as needed, then add cheese and basil and toss until the wine sauce thickens enough to coat the pasta, about 1 minute

8. Serve with additional parmesan shavings and basil on top.
