- Coconut Cake
Ingredients:
- 3 cups of all-purpose flour
- 1 tbsp of baking powder
- ½ tsp of salt
- 2 cups of granulated sugar
- ¾ cup unsalted butter
- ¼ cup of vegetable oil
- 1 1.3 cups of coconut milk
- 2 large eggs
- 1 tsp of coconut extract
- ½ tsp of vanilla extract
- 4 egg whites
- ⅛ tsp of cream of tartar
Instructions:
- To prepare the cake, preheat the oven to 350 degrees Celsius and grease the cake pan with butter
- Now, line the bottom of the cake pan with parchment paper
- In a large mixing bowl, sift the flour, baking powder, salt and mix it well
- In the mixing bowl of an electric mixer, blend the butter, sugar, canola oil on medium speed until well combined
- Now, add in the egg yolks one at a time and mix until combined after each addition
- Now, stir in the coconut and vanilla extracts
- Pour in half of the coconut milk and mix well
- In a separate mixing bowl, whip 6 egg whites with the cream of tartar on medium speed until stiff peaks are formed
- Now, using a spatula carefully fold the egg white mixture into the cake mixture
- Spread the cake batter in the lined cake pan
- Set it in the preheated oven for 20-25 mins
- Once done, allow it to cool for an additional 10 minutes and run a knife along the edges of the cake
- Now, flip it upside down. Spread some of the coconut cheese frosting on top of it and serve!
2. Butter Cookies
Ingredients:
- 1 cup butter
- 1 cup white sugar
- 1 egg
- 2 ½ cups of all-purpose flour
- ¼ tsp salt
- 2 tsp vanilla extract
Instructions:
- In a large bowl, cream together the butter and white sugar until light and fluffy
- Now, beat in the egg, and stir in the vanilla extract
- Combine the flour and salt; stir into the sugar mixture
- Cover the dough, and chill for at least one hour
- Preheat the oven to 200 degrees Celsius. Press the dough out onto ungreased, chilled cookie sheets
- Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges
- Remove from the cookie sheets to cool on the wire racks.
3. Cinnamon Rolls
Ingredients:
- ½ cup butter
- 2 cups of all-purpose flour
- 2 tbsp of white sugar
- 2 tsp of baking powder
- 1 tsp of salt
- 3 tbsp of butter
- ¾ cup of milk
- 1 egg
Instructions:
- Preheat the oven to 200 degrees Celsius
- Now, brush a 9-inch square baking dish with 2 tablespoons melted butter
- Whisk the flour with 2 tablespoons white sugar, baking powder, and salt together in a large bowl
- Work 3 tablespoons softened butter into flour mixture using your hands
- Now, beat the milk and egg together in another bowl; pour into the flour-butter mixture and stir with a rubber spatula until a soft dough forms
- Turn dough out onto a floured work surface and roll dough into a 1/4-inch thick rectangle
- Brush the surface of the dough with 2 tablespoons melted butter
- Whisk 1/2 cup white sugar, brown sugar, and cinnamon together in a small bowl
- Sprinkle 1/2 of the cinnamon-sugar mixture in the bottom of the prepared baking dish
- Sprinkle remaining cinnamon sugar over butter-brushed dough
- Roll the dough around filling to form a log; cut log into 18 rolls and place rolls in the prepared baking dish
- Bake in the preheated oven until rolls are set, 20 to 25 minutes
- Beat confectioners’ sugar, cream cheese, 1/4 cup softened butter, and vanilla extract together in a bowl until frosting is smooth
- Top hot cinnamon rolls with cream cheese frosting.
