Ingredients

• 1 lb of ground chicken
• 1(1 1/4 ounce) package of taco seasoning mix
• 12 taco shells
• 3⁄4 cup of salsa
• 3⁄4 cup of sour cream
• 1 tomato, small cubes
• 1small head of lettuce, sliced into small confetti squares
• 1(2 1/4 ounce) can of black olives, sliced
• 1 cup of cheddar cheese, Shredded in long layers

Instructions

1. Mix the meat with the seasoning mix. Add extra spices if needed. Shape half of the mixture into 24 (1-inch) balls; place in a baking pan and bake at 350 F for 15-20 minutes or until it is cooked through.
2. Brown the remaining seasoned ground meat and add the salsa.
3. Fill each taco shell with a thin layer of ground meat, sour cream, lettuce, and the tomatoes.
4. Position the 2 meatballs inside the taco shell and add a dollop of sour cream on them. Garnish with some olives to make the “eyeballs.” Spread the cheese out on top for the stringy hair.

2. White Chocolate Ghosts

Ingredients

• 1 1/2 cup of white chocolate, chopped into chunks and melted

1. Line two large baking sheets with some parchment paper. Transfer the chocolate to a small, deep bowl.
2. Working with one piece of fruit at a time, dip one end into the chocolate, leaving only the last quarter inch exposed; shake off the excess chocolate and transfer the dipped fruit to the baking sheet.
3. Drizzle a bit of extra chocolate around the bottom left and right sides to form the shape of a ghost, then use the blueberries, currants or sunflower seeds to make the eyes.
4. Repeat this process with the remaining pieces of fruits and chocolates and then chill them until they are completely set, about 1 hour.

2. Remove the cinnamon sticks and the cloves with a slotted spoon; stir in the lemon juice.
3. Garnish with the cinnamon sticks, lemon wedges and the cloves, if desired.

Ingredients

4. Heat the peanut oil in a large skillet over high heat.
5. Add the pumpkin seeds and the remaining 2 tablespoons sugar.
6. Cook until the sugar melts and the seeds caramelize. (about 45 seconds).
7. Transfer to a bowl with spices and coat well. Let them cool and serve.

• 2 large sweet potatoes, scrubbed clean (organic if possible)

4. Transfer fries to 1 large or 2 baking sheets and arrange in a single layer to ensure they crisp up.
5. Bake for 15 minutes and flip to cook on the other side. Bake for 10 to 15 minutes more or until they turn brown and crispy.
6. Remove from the oven and either serve or drizzle with a bit of maple honey to offset the spiciness.

2. Parmesan Sweet Potato Fries

Ingredients

• 3 medium sweet potatoes, scrubbed and cut into 1/4-inch-thick sticks

5. Add the sauce over the cooked gluten-free pasta and top with some fresh basil.

4. Cajun Salmon Alfredo

Ingredients

• 12 ounces of pasta of your choice
• 3/4-pound of salmon fillet
Cajun seasoning
• 1 tablespoon of butter
• 1 tablespoon of flour

• 1/2 teaspoon of dried oregano
• 1/4 teaspoon of salt
• 2 cups of milk

Instructions

1. Bring a large pot of salted water to a boil.
2. Lightly season the salmon with the Cajun seasoning. Cook it on the stovetop for 3-5 minutes per side until the fish is still slightly rare in the center.
3. Cook the pasta according to package directions, drain it, and set it aside.
4. While the pasta and the fish cooks, melt the butter in a large skillet and add the flour, and whisk it until a smooth paste is formed. Very slowly add the milk, about 1/4 cup at a time, whisking constantly until it smoothens.
5. Add the garlic powder, cayenne, cilantro, and salt and stir. Continue cooking and stirring until the sauce gets bubbly and thickens.
6. Add the cheese to the sauce and reduce the heat to medium-low. Stir until the cheese has melted.
7. When the fish is cooked, shred into about 2" pieces. Add the fish to the sauce, and very gently stir it to combine. Serve over the pasta, or add the cooked pasta into skillet with the sauce and gently toss to coat.

  1. Soak the tamarinds in hot water for 15-20, remove any seeds and mash the tamarinds with your hands. Filter out the thick pulp. 
  2. Dilute 2 tablespoons of the tamarind pulp with water and add the cleaned and washed potatoes and the salt. Pressure cook for 1 whistle. Let the pressure drop and drain the potatoes and let them cool.
  3. Peel the skins off, cut them into 8 chunks and keep them aside.
  4. Add the mustard seeds in some oil and let them crackle and then add the urad dal,the red chillies and the curry leaves to it.
  5. Add the potatoes and fry them in oil, on a high flame, for 2-3 minutes while stirring continously.
  6. Once the potatoes have browned, reduce the flame and let them roast over a low flame, for approx. 8-10 minutes, stirring continuously.
  7. Add the salt and the red chili powder and stir to coat the potatoes with all the spices.
  8. Roast for another 2-3 mins on low flame. Serve them immediately with some hot rice.

3. Chocolate- Ice Cream Tacos

  1. Heat the oven to 350°F. Line a cookie sheet with some parchment paper. Make 6 foil balls, and fold the tortillas over them to make taco shapes; place them on the cookie sheet. 
  2. Bake the tortillas, for about 10 minutes or until they are lightly browned and crisp. Cool. Freeze them for 10 to 15 minutes or until they turn cold.
  3. Meanwhile, microwave the chocolate chips and the oil in 30-second increments, stirring in between, until this mixture turns smooth. 
  4. Brush the melted chocolate mixture on the inside of each shell. Freeze them for another 10 to 15 minutes or until they are cold and the chocolate has hardened. 
  5. Fill each taco shell with the ice cream, carefully. Freeze the ice cream-filled tacos for 1 to 2 hours or until the ice cream is very firm.
  6. Reheat the reserved chocolate coating and pour it into a wide container. Remove theice cream tacos and, working quickly, dip each taco into the chocolate coating, being sure to seal in the ice cream completely, and add the candy sprinkles. Freeze the, for another 2 hours or until they turn firm before serving.

  1. Fry the multigrain flour lightly in ghee till it turns golden brown. Set it aside to cool.
  2. Melt the jaggery in 1/4 cup water in a pan; and filter it. 
  3. Add cardamom powder to the filtered mix. Boil till it reaches a thick consistency. To check if the consistency is right: add water in a small bowl & pour half a teaspoon of syrup in the water. After 30 seconds, if you can make a soft ball, then the syrup is ready.
  4. Switch off the flame. Mix the flour and the syrup and add the nuts.
  5. Grease your hands with ghee and make the balls while they are warm. Then, let the ladoos cool before serving.

2. Quinoa Phirnee

What’s the best way to increase the health quotient of your daily desserts? Add Quinoa, of course! This quinoa phirnee is an unlikely yet irresistible sweet delight. No need to guilt trip over this healthy festive dessert!

Ingredients
Instructions
  1. Heat the ghee in a saucepan.
  2. Once, the ghee warms up, add the quinoa and roast it till it turns light brown. Add 1 cup of hot water and bring it to a boil.
  3. Once the water is reduced to half, add 2 cups of hot milk and then, add the saffron strands.
  4. Let the quinoa and the milk mixture come to a boil. Reduce the flame and let it simmer for 7-8 minutes.
  5. Add the powdered sugarfree tablets and the cardamom powder. Stir well and cook.
  6. Add the condensed milk. Let the mixture simmer for 5 minutes. Garnish and serve.
3. Apple Basundi

This creamy marvel of a traditional dessert is just what your palette needs this Diwali!  The apples, chia seeds and the toned milk add in scores of nutrition so you can feast on as much as you like.

Ingredients
Instructions
  1. Bring the milk to a boil and then, reduce the flame and cook on a low flame for approximately 1 hour (till the volume is reduced to half), while stirring occasionally.
  2. Add the sugar free powder and cook on a slow flame for 25 minutes (or till the milk thickens), stirring continuously.
  3. Add the cardamom powder and cook on a low flame for another 20 minutes. Switch off the flame and let it cool.
  4. Heat a small pan. Add the grated apple, 1 gm of powdered and 1 tablespoon of water. Mix well and cook on a medium flame for 2 to 3 minutes. Let it cool and then, add it to the milk mixture with soaked chia seeds.
  5. Serve it chilled and garnished with nuts.
4. Cocconut Choco Truffles

  1. Grate the coconut carefully (only the white bits). In a pan, heat 1 tbsp. of ghee and add the chopped cashew nuts, fry until it turns light brown.
  2. Boil the jaggery with 1-2 tbsps. of water/milk. Let it blend well with the milk and form a syrupy liquid of a stringy consistency.
  3. Now add the grated coconut, the fried cashews, cardamom powder and 3 tbsp. of ghee and stir well. Let it cook, by stirring it constantly, until the edges turn dry and flaky, for 10-12 minutes.
  4. Switch off the flame and add the cocoa powder and mix quickly then let it cool down.
  5. Meanwhile, mix the cocoa powder and the icing sugar and sieve it onto a wide plate to get a uniform mixture.
  6. Make balls out of this mixture, roll them in the cocoa powder mixture and place them on a dry plate and let them set for 30-60 minutes.

Easy Diwali Sweet Recipes That You Have To Try




Whether you are a complete dessert-fanatic or a total spice nut, the festive season is bound to get your mouth watering for some syrupy, crumbly rasgullas or some delectable, melt-in-your-mouth soft motichoor ladoos. 1. Badam Barfis

It’s time to get nutty for Diwali! Whip up these lovely, smooth and gobble-some badam barfis in no time at all. Just one bite will have you savoring these little treats of heaven, all day long!

Ingredients

• 125 gm of Healthy Alternatives American Almonds, soaked, peeled, and ground
• 75 gm of poppy seeds, soaked in milk
• 1-liter of milk
• 125 gm of khoya
• 200 gm of Healthy Alternatives Refined Sugar
• 200 gm of Healthy Alternatives Cow Ghee
• 1/4 tsp. saffron strands
• 4 green Healthy Alternatives Cardamoms

Instructions

1.Strain and grind the poppy seeds.
2.Combine this mixture with the almonds, the cardamoms and the milk.
3.Then, blend this mixture until it is smooth and cook it on a slow flame.
4.Once, the mixture thickens, add the khoya, the sugar and the saffron strands.
5.Thicken the mixture, further.
6.Add the ghee and continue cooking until the mixture comes together.
7.Transfer this mixture into a lightly oiled tray. Cut into any desired shape and decorate the barfis with silver leaves.

2. Mawa Malpuas

Ingredients

• 1 and ½ cup of warm Milk
• ½ cup of Khoya, grated
• 3/4th cup of Healthy Alternatives Organic Whole Wheat Flour 
• 1 tsp. of Healthy Alternatives Roasted Saunf, coarsely grounded
• 2 tsp. of Healthy Alternatives Refined Sugar
• A pinch of salt
• A small pinch of baking powder

For the sugar syrup:

• 1 cup of Healthy Alternatives Refined Sugar
• ¼ cup of Water
• 2-3 green Healthy Alternatives Cardamoms, grounded
• 8-10 Saffron strands

Instructions

1. Add the sugar, the cardamom, the saffron strands and water in a pan and cook until it reaches a syrupy consistency and set the mixture aside.
2. Mix half of the warm milk and khoya until the mixture is well combined.
3. Add half of the flour, too and mix before adding the remaining half. Then, mix again till it is smooth.
4. Add the sugar, saunf, salt and baking powder and mix well.
5. Add the remaining milk, mix well and set it aside for 10 minutes.
6. Heat ghee in a pan, mix the batter and pour a small ladle full of batter in the hot ghee.
7. Simmer the heat to low and fry both sides of the malpuas until they turn golden brown.
8. Remove them from the heat and dip them in the sugar syrup for 2 minutes and serve.

3. Apple Kheer

No festive season is complete without a bowl full of kheer! This apple kheer recipe will, surely, prove to be a total winner at your dinner table, this Diwali! Garnish this dessert with bits of grated dry-fruits and some saffron strands along with a few, thin slices of apple and feel like a gourmet, culinary expert.

Ingredients

• 1.5 cups of full-fat milk
• 1/2 cup of apples, grated
• 2-3 tsp. of sweetened condensed milk
• A pinch of cardamom powder
• A few strands of saffron
• 8 Healthy Alternatives American Almonds, chopped
• 1 tsp. Healthy Alternatives Cow Ghee

Instructions

1. Bring the milk to a boil in a pan and let it simmer on a low flame. Stir frequently to prevent it from burning.
2. Meanwhile, in a smaller pan, heat the ghee and roast the almonds until they turn light golden brown.
3. Add the grated apple to this mixture and saute for 3 minutes or until the mixture turns dry and the apples soften a bit but still retain their crunchy texture.
4. Now, Turn back to the milk. In about 10 mins or so, the milk would have reduced to half the original amount. At this point, add the cardamom and the saffron. Mix well and let it cook for another minute.
5. Now add the condensed milk and the cooked apple-almond mixture. Mix well and serve.

4. Chocolate Kalakand

We love everything chocolate, don’t you? This famous, Indian milk cake gets a chocolatey makeover for the festive season.  If chocolate is your go-to comfort food and milk sweets are your calling, then you must try this chocolate kalakand recipe for Diwali!

Ingredients

• 1 cup of unsweetened khoya, grated

• 1 tbsp. of cocoa powder
• 2-3 tbsp. of milk

Instructions

1. Mix the cocoa and milk to form a thick paste and set it aside.
2. Add the grated khoya and the sugar to a wide pan kept on low flame. Gently heat and mix for 3-4 minutes, until the khoya thickens and starts rolling around your spatula.
3. Take half of this mixture and pat it firmly at the base of a greased plate. Quickly, add the cocoa powder and milk mixture and stir to combine. After a min, remove.
4. Pat the chocolate mixture firmly and evenly on the layer of the remaining khoya mixture.
5. Add the chopped nuts to garnish.
6. Cool the mixture to room temperature and refrigerate for an hour before cutting it into squares.
