Go Gluten Free

What is gluten?

Gluten is a protein found in several types of grains, inclusive of wheat, barley, and rye. Gluten consists of Gliadin and Glutenin. When the flour is mixed with water, gluten forms a sticky cross-linked network of proteins, giving elastic properties to the dough and allowing bread to rise when it is baked. Due to this property, it is widely used in many bakery items.
A gluten intolerance is the body’s inability to digest or break down the gluten protein.  Gluten, a mixture of two proteins found in grains, especially wheat, has been infamously in the limelight. Gluten intolerance is a new age issue diagnosed to many. Gluten is tolerant to most people, however, people with celiac disease cannot digest this protein, thus need to consume gluten free foods.
