Ingredients:
•3 cups diced blueberries
•1 1/2 cups Epigamia Greek yogurt
•2 Tbsp lemon juice
•1/2 cup sugar
•1/4 cup milk
•1/8 cup chocolate shavings

Instruction:
•Place the diced blueberries, lemon juice, and sugar in a medium saucepan and bring to a simmer.
•Stir until the sugar is completely dissolved.
•While the mixture is heating, mash up the berries.
•When all the sugar has dissolved, remove from heat and let cool for 10 minutes.
•Place contents in a blender and blend until smooth.
•Mix blueberry puree, milk, chocolate shavings and yogurt together in a bowl.
•Chill in the refrigerator for at least an hour.
•The longer the mixture chills the better (can chill overnight).

Beat the heat the mango way

Fresh Mango ice cream

MANGO PANNA COTTA

The luscious tropical flavor of ripe mangoes pairs beautifully with soft and creamy Panna Cotta.

Fresh Mango Panna Cotta

Ingredients:
Mango puree - 1 1/2 cups
Fresh cream - 1 1/4 cup
Vanilla essence - 1 tsp
Full fat milk - 3/4 cup
Cardamom powder - 1/4 tsp
Sugar - 1/2 cup
Agar agar - 2 tsps
Lemon juice - 1 tsp

Instructions:
•To prepare mango coulis. In a small vessel, add the mango puree, sugar, cardamom powder and simmer for 2 minutes.
•Turn off flame, add lemon juice and mix. Allow to cool.
•Lightly grease the insides of the bowls you are going to serve the panna cotta.
•Divide the mango coulis among the dessert bowls and cover with cling wrap and refrigerate for an hour or two.
•In a small bowl, soak agar agar powder in hot water and keep aside for a few minutes.
•In a stainless-steel vessel, add whole milk and fresh cream and bring them to a boil on low flame.
•Add sugar and simmer till the sugar dissolves. Stir occasionally. Turn off flame.
•While the sugar is dissolving in the milk mixture, prepare the agar agar mixture.
•Place the small bowl on low flame and stir continuously till the agar agar melts and becomes a clear mixture with no lumps. Remove from heat.
•Test the milk mixture with your fingers to see if there is any undissolved sugar.
•The sugar must be completely dissolved and blended well with agar agar. Place this over an ice bath (bowl of ice water) and whisk well till luke warm.
•Add the cooled agar agar mixture, vanilla essence and cardamom powder to the milk mixture and mix well till it is well blended.
•Remove the cling wrap from the refrigerated dessert bowls with mango coulis and divide the milk-agar agar mixture among them.
•Cover with cling wrap and refrigerate for at least 4 to 6 hours or overnight.
•At the time of serving, remove the cling wrap, garnish with few mango cubes.

MANGO KULFI

Summer’s rising temperatures call for a dessert that cool you down. What is better than a mango Kulfi after a long and sultry day. This delicious dessert can be easily made with just 5 simple ingredients.

Mango Kulfi

Ingredients:
Fresh ripe mango puree - 3/4 cup
Fresh cream - 1/2 cup
Cardamom powder - 1/4 tsp
Condensed milk - 1 can (400 grams)
Pistachios or almonds - fistful, finely chopped

Instructions:
•Place chilled cream in a bowl and beat for 4 minutes. Place in fridge till use.
•In a bowl, add condensed milk, mango puree and cardamom powder and beat for 2 minutes till well combined.
•Add the beaten chilled cream and mix well till combined.
•Fold in the nuts and pour the mixture into kulfi molds till 3/4th full.
•Seal the molds and freeze for at least 5-6 hours.
•At the time of serving, place molds under tap water for a few seconds so that it releases easily from the mold.
•Insert sticks into each kulfi and serve.

MANGO RAITA

One would definitely like the texture of mangoes blending with the velvety smooth texture of the beaten yogurt or curd. Fresh mint adds a fragrant and colorful touch to this fruity raita.

Ingredients:
Mango - 1, large, peeled and chopped into small pieces
Red chili powder - 1/4 tsp
Black salt - large pinch
Yogurt - 1 1/4 cups
Roasted cumin powder - 1/2 tsp
Chaat masala - large pinch
Mint leaves
Salt to taste

Instructions:
•In a bowl, add the fresh and thick curd and beat till smooth.
•Add 1/4 cup water and salt and mix well with a whisk.
•Add the chopped ripe sweet mango pieces and mix well.
•Sprinkle roasted cumin powder, red chili powder, chaat masala, and black salt over the raita.
•Garnish with fresh mint or coriander leaves. Chill until serving time.

DIY Easter eggs

This Easter we hope your Easter basket is full of joy, happiness and a lot of pretty Easter eggs. Make some of the prettiest eggs with easily ingredients around the kitchen. Here are some DIY tricks we have up our sleeves.

Marble eggs

All you need for this is whipped cream, food colours of your choice, white vinegar and hard boiled eggs waiting to be marbelled. Thaw the whipped cream in a baking dish and swirl the colors using a toothpick or a knife. Soak the hard boiled eggs in vinegar for 10 minutes, this allows the eggs to absorb the colour. Remove the eggs from vinegar and pat them dry. Then cover them in the coloured cream mixture and let it sit for atleast 15-20 minutes. Remove the excess by gently placing the eggs in a bowl of water. Pat dry and allow to dry completely. And tadaaa! It’s ready.

While matte eggs can be made simply by colouring them with acrylic paints and letting them dry, to make shiny and glossy eggs all you need to do is rub bacon fat or little vegetable oil on them once they are dry.

Bring out your favourite colour pots and paint your favourite patterns. If you would like to go the natural way, use spices or vegetable dyes for an organic feel. For example to get a natural yellow dye, boil water with distilled white vinegar and turmeric. Add the eggs in this and let them steep for atleast 30 minutes and upto 3 hours as per the desired intensity of the colour. Swap the turmeric for red cabbage to get a blue/purple dye.

Summer Soiree Mocktails

Summer is here and it’s the perfect time to throw your very own summer soiree. And what is a summer soiree without the perfect summer drinks? Prepare these tasty, refreshing and fun drinks for your family using a handful of magical ingredients.

Melon Ball Punch

If there is another name for this, it would definitely be “Bottled up summer”. This mocktail brings together juicy melon balls with the punch of tart lime slices and the freshness of mint leaves. These fresh ingredients infuse their flavours very quickly elevating the flavour of the drink.  

Ingredients:
•500 ml Sparkling white grape juice
•1.5 cups clear lemon flavoured soda
•1 cup lemonade
•1 small watermelon
•1 small muskmelon
•1 small honeydew melon
•Fresh mint leaves
•2 limes, sliced

Method:
  • In a pitcher stir lemonade, grape juice and soda together and chill in the refrigerator.
  • Using a melon baller, scoop out the fleshy melons and place on foil and freeze for 3-4 hours.
  • Once frozen, add the melon balls to the pitcher along with mint leaves and lime. Stir the mixture and refrigerate for at least 30 minutes. This would allow the flavours to infuse.
  • Add frozen melon balls as ice cubes and serve.
Kiwi Blueberry Mojito

Why serve your guests the same old colas on your summer soirees when you can hit them up with the freshest of the season. Kiwi blueberry mojito is an unusual twist to your classic mojito that is sure to elevate the mood of your summer parties.

Ingredients:
•6 kiwis, peeled and cut in pieces; 4 kiwis for garnishing
•150 gms blueberries, to be crushed; 150 gms blueberries for garnishing
•¼ cup fresh lime juice 
•½ cup sugar
•100 gms mint leaves
•3 ½  cups of sparkling water
•Ice as needed

Method:
  • Pulse the kiwis in a puree with lime juice and sugar. Combine the puree with sparkling water to get a smooth puree.
  • Crush the blueberries gently using a muddler. 
  • Rub lemon on the rim of the glasses to moisten them and then cover them with blue green sugar/sprinkles. 
  • Pour the kiwi puree in a pitcher, add a layer of ice, a handful of mint leaves and kiwi slices. Add another layer of ice and then top with crushed blueberries and mint leaves. Pour in sparkling water and gently stir and serve.

You can make the drink in individual glasses or mason jars too.

Enjoy the warm days with a cool drink to sip on. This pink drink, perfect for a sundowner is very easy to make. You can stir up this drink in minutes and its attractive colour is sure to have the glasses raised. 

Ingredients:
•300 gms fresh raspberries
•1 cup fresh lemon juice, chilled
•1/2 cup cold water
•1/2 cup granulated sugar (or to taste)
•1/2 cup honey HA honey
•1 liter sparkling water or club soda, chilled
•Fresh mint and ice, for serving

Method:
  • In a food processor, puree the raspberries. Strain the puree through a fine mesh into a bowl.
  • In a pitcher dissolve the sugar in water. Add honey and stir thoroughly. Pour in the raspberry mixture and add the lemon juice and stir again. 
  • Add the soda, stir and serve chilled over ice and mint.

5 Ingredient mango lemonade

With the sun shining bright in the sky, prepare this sun-kissed drink with the king of fruits for your guests in summer dresses and aviators. This delicious drink can be made with just 5 ingredients. All that you will need is mentioned below.

Ingredients:
•2 cups/ 500 ml Mango pulp made with Alphonso mangoes 
•½ cup sugar
•¾ cup of water
•1 large lemon
•Mint leaves

Method:
  • Add sugar to the water over medium heat and stir until completely dissolved. Once done, allow it to cool.
  • Combine the mango pulp with the lemon juice and 3/4th of the sugar syrup. If you would like it sweeter, add more sugar. 
  • Load the glasses with ice, and pour the chilled mango lemonade on them. Garnish with mint leaves and serve chilled.

Strawberry spinach salad

INGREDIENTS
Salad Ingredients
4 cup fresh strawberries,
1 1/2 cup baby spinach torn into bite-size pieces
1/2 cup fresh blueberries
1/4 small red onion sliced
1/2 cup pecan halves
1/2 avocado, cut into bite sized pieces
1/2 (5 ounce) packaged blue cheese crumbles

Dressing Ingredients
1 tablespoon mustard
1/4 cup HA olive oil
1/4 cup white wine vinegar
2 tablespoons sugar
1/4 teaspoon paprika
1/2 teaspoon salt
2 garlic cloves, minced
1/4 teaspoon pepper

METHOD
•In a pint sized jar combine all the dressing ingredients.
•Cover it and shake until well combined.
•Set it aside.
•In a large bowl combine the spinach, onions, strawberries and blueberries.
•Pour half the dressing over the salad and toss it thoroughly.
•Add avocado, cheese and pecans on the top.
•Serve remaining dressing on the side.

Plum and peach tropical salad
Begin your meal with a salad packed with the goodness of vegetables. Loaded with high amount of essential nutrients and vitamins this flavourful salad is a must try and will be ready in a jiffy. Red wine vinegar balances the sweetness of ripe fruit, while basil and cilantro add a floral dash to this fresh summer salad.

4 plums, pitted and cut
4 peaches, pitted and cut
1⁄3 cup basil leaves, torn
1⁄4 cup red wine vinegar
1⁄4 cup fresh lemon juice
1 small red onion, thinly sliced,

2 tsp. kosher salt, plus more to taste

METHOD
•In a bowl toss peaches & plums with 2 tbsp. lemon juice and vinegar.
•Transfer the mix into a serving dish.
•Add the remaining juice, onion and 2 tsp salt into bowl, toss them thoroughly.
•Sprinkle the onion mixture over fruit and leave the juice in the bowl.
•Add Basil & cilantro into a bowl.
•Add salt and pepper for seasoning, toss them to combine and scatter over fruit.
•Drizzle it with olive oil & black pepper.

3 cup strawberries, chopped
1 1/2 cup grapes, halved
3/4 cup blueberries
3/4 cup raspberries
Zest from one lemon

For Honey Mascarpone
1 tablespoon honey
1/2 cup mascarpone, softened
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1/4 cup Greek vanilla yogurt
2 teaspoon sugar

METHOD
•Whisk together all the Honey Mascarpone ingredients until smooth.
•Add strawberries, raspberries, blueberries and grapes into a large bowl.
•Add Honey Mascarpone mixture into the fruit bowl and gently mix together until well combined.
•Drizzle it with Lemon Zest.

DIY fruit popsicles

When you come home after a day out in the sweltering heat, we are sure you think about those icy popsicles from your childhood which colored your tongue orange. Those ice candies, loaded with sugar and color could be relished then. Now let’s forward to the updated grown up and healthier version, home-made, natural fruity popsicles which are sure to refresh you instantly without the worry of the additional calories. What’s more you can enjoy making these with your kids at home using the freshest fruits of the season. 

Make popsicles using our Healthy Alternatives greek yoghurt with the goodness of berries. Blueberries and blackberries, both high in antioxidants are great in the summer. Add in the yoghurt and you have a cooling mix right there. Try these blackberry Ombre popsicles for a richer flavour. 


blackberry Ombre popsicles

Yogurt Mixture
•175 ml Healthy Alternatives Greek yogurt
•1/4 cup low-fat milk
•pinch of salt
•1/4 cup sugar
•60 ml reduced-fat cream cheese, softened
•1 tsp vanilla extract

Blackberry Mixture
•2/3 cup sugar
•1 Tbsp lemon juice
•2/3 cup water
•pinch of salt
•4 cups blackberries

Method:

1.Hang the curd in a cloth to drain off excess water for at least 4 hours (or overnight). Combine all the ingredients of the yogurt mixture and process until smooth.

2.Bring the water and sugar mixture to a boil until the sugar is completely dissolved. Let it sit aside to cool.

3.Once cooled, combine the syrup, lemon juice, salt and blackberries in a processor and puree.

4.In one bowl keep pure blackberry mixture, while in the second combine a few table spoons of the yogurt mixture to lighten the colour, and in the third add the entire yogurt mixture. 

5.Fill the moulds first with the darkest colour mixture, top it with the second and follow up by the third.

6.Refrigerate overnight to get delicious blackberry ombre popsicles in the morning. 

Finally, you can’t go wrong with watermelon in the summer. This fruit which is so high in water content makes for amazing coolers and is bound to find its way in your fridge this season. Try this delicious Hibiscus and minty watermelon popsicles on a hot summer day. It makes for a nice and simple recipe for a brunch party too. 

Hibiscus and minty watermelon popsicles

Ingredients
· 3/4 cup water
·1 inch fresh ginger peeled + finely chopped or grated for more flavour
·2 tablespoons dried hibiscus flowers
·1/4 cup honey add 1-2 tablespoons more for a sweeter pop
· 4-5 cups fresh watermelon
·1/4 cup fresh mint you can also use basil
· the juice of 1 lemon

Method:

1. Boil water in a medium sized pot. Remove from heat and add hibiscus flowers, mint leaves, honey and ginger and let the flavour seep for 20 minutes. Strain the mixture and discard the remains.

2. Add watermelon and lemon juice to the blender and blend until smooth. Strain this mixture through a cheesecloth and squeeze out all the juice and discard the pulp.

3. Add the mixture to mould and refrigerate for at least 4 hours.


4. Run the moulds under hot water for 10 seconds, remove the popsicles and enjoy!

Ingredients:

Produce
·1 1/2 cup Mango pieces, fresh or frozen
·1/2 cups Strawberries, fresh or frozen

Condiments
·1 tsp Honey
·Nuts & seeds
· 4 tsp Chia seeds
·1 1/4 cup Coconut water

Method: 

1. First in a blender pulse frozen strawberry pieces with coconut water, honey, chia seeds and nuts (as desired). Keep the mixture aside.

2. Blend frozen mango pieces with the remaining with coconut water, honey, chia seeds and nuts (as desired).

3. In clean popsicle moulds, put a few spoons of the strawberry mixture, topped with the mango one.

4. Repeat until the mould is completely filled.


5. Freeze for 4-6 hours or overnight.
